Irresistible Irish Soda Bread

Super easy! Other then using margarine, I didn't change a thing. I used a 9x5 inch loaf pan and covered it with foil after 45 minutes because it was getting brown. I baked for a total of 65 minutes and it smells wonderful!

Chicken Enchiladas I

Umm...okay well I omitted the water, used only 8 oz sour cream, used lemon pepper because I was out of black pepper, used one 4 oz can of diced green chili instead of bell pepper, subbed mexican 4 cheese, and the real problem came in when I tried to substitute enchilada sauce for taco sauce. Oh My God. Enchilada sauce is so strong! It was too strong for my taste buds so I used one 16 ounce can of mild salsa mixed with 1 8 ounce can tomato sauce...which turned out far too sweet, so I poured in about 1/2 cup enchilada sauce and it turned out just right. Gah. Next time I will try to stick to the original recipe!

Chocolate Chip Pancakes

I followed the recipe exactly and it turned out pretty good! The batter was extremely thick but that was perfectly fine. The texture was super light 'cuz of the baking powder. Thanks.

Coconut Cake III

I made this for my mom's birthday, and with the following changes it turned out excellent! For the batter, I omitted nuts and chopped the coconut finely. Then I split the two 9 inch cakes into 4 layers and filled it with the pineapple topping recipe also from this site. For the frosting, It would have been way too sweet for my asian tastebuds, and so I used 1 8 oz package of cream cheese and only 3/4 cup sugar! YES, it might sound like too little but the cake itself is already extremely sweet. After frosting the cake, I toasted 2 cups of coconut and smothered the entire cake with it so it looked like one big toasted snowball. The flavor was out of this world. Thank you so much for this recipe!

Baked Spaghetti I

This recipe was pretty good. I found the meat kinda bland though so I added some worcestershire sauce, some ketchup, lots of pepper, and some salt. I also omitted mushrooms because I didn't have any. The over-all taste was good though, so thanks.

Knefla Soup I

Ok, One cup was waaay too much milk for the knefla pieces. I had to add much more flour to it since it was impossibly sticky. The over-all taste was pretty good, and the knefla were pretty chewy.

I cut the recipe in half, and it turned out pretty good. However when I added the beef broth, I didn't have enough to bring it to a boil...but whatever. I also added way more ketchup because I thought the beef needed more flavor.

This cake was really moist and yummy. However, I shouldn't have listened to other reviewers about adding extra spices, because in the end, the spices over-powered the apple flavor and it didn't taste like apples at all. *sigh*

Lemon Pudding Cake I

Hmm...this cake was OK. I thought the pudding on the bottom was kinda strange...it was globbish and not very pudding-like. Oh well. I won't be making this again, but it was a good first try.
