Black Bean and Corn Quesadillas

I was a little leery about using brown sugar in these but I did and they were delicious! I took the advice of others and baked them in the oven instead of skillet. My 2.5 year old daughter also scarfed them up! Love when we can find meatless entrees every once in a while!

These weren't too bad. I like my mom's recipe better. I don't like mine super sweet but I didn't think these were quite sweet enough.

Lemonade Pie III

This was ok. It was too sweet for my taste. I've heard from other friends who have made this but used the dry lemonade powder mix and they said it wasn't sickeningly sweet. Will probably do that next time.

Asian Pork Tenderloin

Delicious!!! I added more chili paste thinking I wanted it more spicy but I went a little overboard so I was taking drinks of water after every bite but that was my fault! The flavor was wonderful! We had it with brown rice.

Easy Chicken Fajita Soup

Love this soup. I used rotisserie chicken which made it even easier if possible! Truly did taste like fajitas. We will be adding this to our regular soup collection.

Chewy Coconut Cookies

tasted good! mine were flat even though i made sure my baking soda was not even near expired and i put the dough in the fridge for 30 minutes before baking. but they still tasted good! i LOVE coconut so i would probably add more next time, just my opinion though! :)

Easy Tuna Casserole

YUM!! this is a great quick and easy tuna casserole and we are adding it to our list of regulars. i made it as is except for i used cream of mushroom instead of cream of chicken. and i did the whole wheat macaroni since it didn't specify. very tasty....what couldn't be good with those onions baked on top!!

Spinach and Potato Frittata

Delicious!!! I only used 3 red potatoes and substituted 1 c. of low fat shredded cheese and used 1 huge clove of garlic. (LOVE garlic!!) Alos put a whole bag of spinach in. My husband and I agreed to add this to our regular rotation!!

Banana Chocolate Chip Cake

oh my! this cake is delicious!!! SO moist. i made some changes after reading the reviews. used 1 c. sugar, used 3 bananas (we love them in our house!) and 1 c. chocolate chips. oh....and also used baking soda instead of powder. wonderful flavor. will definitely make again!!

Tater Tot Casserole II

Late on the review....but I made this right before I had my baby in April and put it in the freezer for when we ran out of meals people brought us. i added ground beef give it some protein and we loved it! it was a great time for comfort food and that is exactly what it was. yummy :)

Jewish Coffee Cake

I was going to make my great aunt's coffee cake for some company but didn't have a couple ingredients so i tried this. i didn't even finish my piece. my two guests did but i could tell by their faces that they were just being nice. which was confirmed when my husband got home and tasted. not sure if i did something wrong or if i'm just comparing it to my aunt's recipe and it doesn't measure up. would not make this again.

Homestyle Turkey, the Michigander Way

I used this to make my first turkey this Thanksgiving and it was SOOOO good!! My mother in law was very impressed and so was everyone else. Will definitely use this again next time it's my turn! Very very very flavorful!!!

Linda's Lasagna

5 days later and my huband is still talking about how good this is!!! i must say i thought it was delicious too. my first time trying lasagna....not sure why i was so scared to try! it was time consuming but worth it. the only change i made was that i didn't use the sugar. so tasty. this is a must make!
