Cinnamon Rolls II

Great recipe. I altered slightly using 1 cup of milk in the dough and substituting 1 cup of brown sugar for the filling. My bread maker has a 2 lb. loaf capacity so the amount worked fine. I baked mine in muffin tins and they were not just delicious but looked like they were professionally made. If you add more flour than what is called for they will be drier. I use cooking spray to coat my board and rolling pin. If you dust a small amount of flour onto the top of the rolled dough, they will easily cut without sticking to the knife. I use a serrated bread knife to cut them.

Italian Dressing Mix

Great base recipe. I omitted the salt and sugar, and reduced the oregano by 1/2. I use red wine vinegar, olive oil and honey. I mix a large batch and keep in a spice container bottle. This makes is convenient to make multiple small batches of the dressing. My husband loved it and guests rave over it. I made it once with mayo but prefer the vinegar/oil mixture.

Fluffy Pancakes

Fluffy, great tasting pancakes. This is the best scratch recipe I have ever used. I do always add vanilla. I added 1/2 tsp to this recipe. My husband loved them.

Gooey Butter Cake III

These are wonderful if you throw some blueberries in. I've also made them in mini muffin tins. It's more work but it makes a nice dessert for a special occasion and every piece has crust.

Whole Wheat Blueberry Muffins

These muffins were really good. I usually use white whole wheat flour for these recipes as it makes for a lighter texture. I didn't have applesauce so I substituted 6oz of vanilla yogurt. I also added 1 tsp of vanilla. I used 1/2 c sugar in the batter and then sprinkled some on the tops before baking. It gives the muffin a nice crunch topping. I will definitely make these again. The texture was very light. I think others who altered the baking powder amounts may have caused theirs to be denser.

Avocado Pineapple Salad

I had to make some alterations. The cucumbers don't sit well with the hubby and only used a dash of salt. Other that that this is a wonderful recipe. It keeps well for a couple of days, also. I want to try it as a chicken salad base, too. I will definitely make this again.

Pumpkin Wheat Honey Muffins

I made these just as written and they were great. The cooking time was increased by 5 minutes. You would never know they were 100% whole wheat. I made a second batch subbing half of the oil with applesauce. The cooking time was spot on with that adjustment. ~Update: I made this again only a little more heart healthy. I substituted 4 egg whites. Reduced the sweetener to 1/4 C of brown sugar and 1/4 C of honey. I always use at least 3/4 c raisins. Plenty sweet and wonderfully moist. For mini muffins reduce cooking time to about 13 minutes.
