Classic Creamy Coleslaw

This is indeed a classic coleslaw. I've been looking for a perfect slaw recipe for years, and though I always found one I liked, I never found one I loved and want to make often. I made this at Christmas and even my brother who is no big fan of slaw was eating it up. I've made it with the bagged slaw, but it just doesn't compare to a fresh head of cabbage chopped up fine in the Cuisinart. Thank you for posting this keeper!

Stuffed Eggplant Parmesan

This is one of my favorite recipes. I love eggplant and was looking for something easier to make than eggplant parmesan. I didn't think my 2-year-old would like it but he called it "pizza" and ate it up. Even DH liked he's not a big fan of eggplant. The only thing I changed was cooking it with foil wrapped around the baking dish. This made the eggplant more tender and easier to eat. Thanks for the tasty, easy-to-prepare recipe!

Best Oven Baked French Toast

Oh, my goodness. This is one of the most delicious baked french toast recipes I've ever had. I first made it for Christmas last year, and used ordinary, cheap sandwich bread with the crusts on and it was OK. But now I buy the good quality farmhouse bread and cut the crusts off. I add more brown sugar to the bottom of the dish, too so when I cut it and flip it over on the plate, it's buttery and sweet. Served with grits and breakfast meat this is one of our favorite meals. Oh, and I don't refrigerate over night either and it's still great. I will for this year's Christmas morning meal. Thanks!

Barbecued Shrimp

I'm giving this four stars because my husband loved it, but I thought it was way too peppery and garlicky. I woke up in the middle of the night tasting these spices, and, yes, I did brush my teeth before going to bed. It's similar to a recipe I found in a coveted cajun recipe book, but that recipe does not call for so much pepper or garlic and it's much tastier, IMO.

Cajun Crab Cakes (No Breadcrumbs)

So flavorful with all the spices and you can taste the crab because of the lack of breadcrumbs that are so much a part of other crab cake recipes. I broiled mine and they were light and tasty. I'll try frying and baking in the future just to see what a difference it makes. Thanks for the wonderful recipe!

Aunt Edith's Baked Pancake

I was so sick of frozen waffles and traditional pancakes, so I tried this easy recipe. I slid it onto a big plate, cleaned off the center of the kitchen table, and we tore off big chunks and put on our plates to drizzled with maple syrup. Very delicious and one of my favorite new recipes to make. Thanks!

J.P.'s Big Daddy Biscuits

This was the best biscuit recipe I've found so far, and I've tried plenty, trust me. I mixed the dough and let it rest in the fridge, and while I did knead the dough some, I may follow the advice of others and not knead it at all. UPDATE: Made these this morning and didn't knead the dough; they came out light and fluffy. I'm going to try buttermilk next time. I found that just pressing the dough down with my palms instead of rolling makes for thicker biscuits. I'm upping this to five stars.

Blackberry Pie I

Very delicious yet simple recipe for blackberry pie. The blackberry seeds were a little crunchy; not sure what can be done about this unless the blackberries, flour, and sugar are cooked a little beforehand on the stove to soften them up some.

Pecan Turtles® Bars

Followed to a T and used a 13x9 pan. My bars were so flat and looked nothing like the other recipe photos. Very buttery but has a good taste. Won't make again, though.

Creamy Pimento Cheese

The best pimento cheese spread I've ever made or tasted. I've tried recipes before that was too simple: mayo, cheese, and pimentos. I think a great pimento cheese recipe calls for more than that, and this recipe has it. I also added the pimento juice and the pimento flavor is incredible. I only had a medium cheddar, but I believe it would be better with extra-sharp, which is what the recipe calls for. Thanks for sharing!

Cajun Crabmeat Au Gratin

This is the second time I made this dish (first time was about two years ago) and it's as great as I remembered it. Very rich and delicious. I don't like American cheese so I used 1 cup of Cheddar in the dish and one cup on top after baking. I may add the green onions in the mix next time or leave them off. I felt they subtracted from the overall excellence of the casserole. Will be making this again and again. Thanks!

Pasta with Tomato Cream Sauce

This sauce has a very light taste that I prefer over the darker red pasta sauces. I think the only change we made was adding a bit more garlic. As someone suggested, make sure you get a good quality sauce. I think that makes a difference. This one is a keeper. Thanks!

Amish Slaw

This is a fantastic slaw recipe. It has just the right sweet and sour taste to it. My husband dislikes mayo-based slaw so I made this for a picnic at the river and even he liked it. I'm very picky about slaw and when I order it at a restaurant, I'm usually disappointed unless it tastes like Amish Slaw. Other than finely chopping the cabbage in a food processor I followed the recipe to the "t."

Leek and Cheese Quiche

Excellent quiche recipe that can be modified for any ingredient you'd like to include. The only things I did differently were to add a little nutmeg to the cream/egg mixture,didn't put the tomatoes on top because I don't like baked tomatoes, and I used a homemade pie crust that wasn't frozen. This led to the edges being burned during the 15-min. first heating, so I will either freeze the crust in a pan next time, or play around with the temps. Thank you so much!

Crab Quiche

Wonderful base recipe for quiche. I make my own pie crusts, so I didn't buy one from the store. And I don't like fake crab so I used real. Other than these minor changes, I followed the recipe and it came out perfect. I like the instruction about cooking it and then turning off and letting it set up in the warm oven. I do this with cheesecakes and it works out great. My son who likes fish and salmon loaf/croquettes tried the quich but didn't like it, but my husband and I loved it. Thanks!
