Cajun Crabmeat Au Gratin

Reviewed: Aug. 11, 2011
This is the second time I made this dish (first time was about two years ago) and it's as great as I remembered it. Very rich and delicious. I don't like American cheese so I used 1 cup of Cheddar in the dish and one cup on top after baking. I may add the green onions in the mix next time or leave them off. I felt they subtracted from the overall excellence of the casserole. Will be making this again and again. Thanks!

Pecan Turtle Bars

Reviewed: Feb. 24, 2011
Followed to a T and used a 13x9 pan. My bars were so flat and looked nothing like the other recipe photos. Very buttery but has a good taste. Won't make again, though.

Black Bean and Corn Quesadillas

Reviewed: Dec. 31, 2010
Nice change from regular quesadillas. I loved the sweetness of this dish, although my husband prefers spicier quesadillas.

Creamy Pimento Cheese

Reviewed: Sep. 11, 2010
The best pimento cheese spread I've ever made or tasted. I've tried recipes before that was too simple: mayo, cheese, and pimentos. I think a great pimento cheese recipe calls for more than that, and this recipe has it. I also added the pimento juice and the pimento flavor is incredible. I only had a medium cheddar, but I believe it would be better with extra-sharp, which is what the recipe calls for. Thanks for sharing!

Barbecued Shrimp

Reviewed: Sep. 7, 2010
I'm giving this four stars because my husband loved it, but I thought it was way too peppery and garlicky. I woke up in the middle of the night tasting these spices, and, yes, I did brush my teeth before going to bed. It's similar to a recipe I found in a coveted cajun recipe book, but that recipe does not call for so much pepper or garlic and it's much tastier, IMO.

Aunt Edith's Baked Pancake

Reviewed: Sep. 7, 2010
I was so sick of frozen waffles and traditional pancakes, so I tried this easy recipe. I slid it onto a big plate, cleaned off the center of the kitchen table, and we tore off big chunks and put on our plates to drizzled with maple syrup. Very delicious and one of my favorite new recipes to make. Thanks!

Chili Sauce Chicken

Reviewed: Sep. 7, 2010
I don't eat meat, but I have started cooking more meat for my husband and child. My husband loved this dish! I tasted the sauce and thought it was a little heavy on the basil, but he didn't complain. I didn't have any chicken broth or white wine, so I'm wondering if that would have added even more flavor. Definitely a keeper. Thanks!

Creamy Au Gratin Potatoes

Reviewed: Sep. 7, 2010
Tasty recipe for this great comfort food dish. I thought it needed a little more salt or some kind of spicy kick, though. But it's a great base recipe and I will continue to make it for my family.

Apple Betty

Reviewed: Sep. 7, 2010
I made this for a family get together and everyone raved about it. I served it with a scoop of good vanilla ice cream, and the creaminess of the ice cream with the sweet, crumbly topping was out of this world. It was easy as pie to make, too. Thank you so much!

Double Fudge Kahlua Brownies

Reviewed: Sep. 4, 2010
Perhaps I did something wrong? The brownie was so dry it was almost inedible. I sifted the flour and THEN measured 1 1/3 cup of sifted flour. Is this right? Or is it 1 1/3 cup flour, sifted.

Mushroom and Potato Chowder

Reviewed: Jun. 28, 2010
I made it exactly as the recipe called for and it is delicious. I love how the mushrooms get a meaty texture to them from simmering. Will make this one often. Thanks for sharing.

Pasta with Tomato Cream Sauce

Reviewed: Sep. 2, 2009
This sauce has a very light taste that I prefer over the darker red pasta sauces. I think the only change we made was adding a bit more garlic. As someone suggested, make sure you get a good quality sauce. I think that makes a difference. This one is a keeper. Thanks!

Au Gratin Potatoes

Reviewed: Jul. 11, 2009
The best Au Gratin potatoes ever. I kept the onions in the recipe because it adds flavor to the potato/cheese sauce combination. The house smelled delicious for hours afterwards! Thanks so much. I've tried other Au Gratin recipes but none compare to this one. This is a keeper.

Outback Onion Soup

Reviewed: Dec. 14, 2008
I never had the onion soup at Outback, but this is one of the best soups I've ever had. I made some homemade bread and a salad to go with the soup. My husband loved it. I'm giving some leftovers to my mom tomorrow to help her get over a cold. I followed the recipe to a T. Will make this again and again. Thank you so much! ETA: You can temper the water/flour mixture with about a cup of the hot broth. That should make enough liquid to slowly whisk it in without any lumps. It's wet enough to stir in without breaking up the onions, so no need to remove the onions. Again, great soup!

Stuffed Pattypan Squash

Made this at Thanksgiving last year and the folks really enjoyed it. They're even better as leftovers. I love yellow squash and am always looking for alternative ways to cook it. Thanks for the great recipe.

Black Bean and Salsa Soup

Reviewed: May 25, 2008
I've got some of this delicious soup cooking in the crock pot as I'm writing this review. I love the way it makes the house smell. The recipe is simple to make and hearty to eat. The first time I made it I blended both cans of the beans. While I enjoyed the texture, my husband recommended leaving one can whole the next time. Now I just blend one can of beans with my immersion blender, then add the salsa and blend, then add the whole beans and spices. The crock pot does all the rest. We eat it with cheese quesadillas and garnish with onions, sour cream, and cheese. It's a wonderful recipe.

Simple Macaroni Salad

Reviewed: May 25, 2008
This is a fantastic macaroni salad. My mother had to make sure she took a giant bowl home with her. Most macaroni salads are all the same, but this one has the vegetable soup mix which perfectly seasons it. Pasta can really soak up the dressing, so I ran the pasta under cool water when it was done. I then doubled the dressing and let it sit in the fridge overnight. I added another spoonful of mayo right before serving to make it creamier. Thanks for this wonderful recipe.

Beer Dip I

The taste of this dip is unique and wonderful. I couldn't get enough of it and neither could some of my guests. I will be making this dip for many parties to come. The beer really made the dip. Thanks so much!
