Cheesy Baked Eggs

Great taste, but cooking for an hour caused it to be too brown on top. Have made a note to check it after about 40 mins.

J.P.'s Big Daddy Biscuits

This was the best biscuit recipe I've found so far, and I've tried plenty, trust me. I mixed the dough and let it rest in the fridge, and while I did knead the dough some, I may follow the advice of others and not knead it at all. UPDATE: Made these this morning and didn't knead the dough; they came out light and fluffy. I'm going to try buttermilk next time. I found that just pressing the dough down with my palms instead of rolling makes for thicker biscuits. I'm upping this to five stars.

Rich and Creamy Tomato Basil Soup

Update: I never do this, but just had to pop back in to say that this is our favorite soup ever, and I make it at least once a month. (Just had a bowl for lunch.) This time I forgot to buy fresh basil so I threw in some that I had dried from last year's garden, and it was just as flavorful. Thanks for this great recipe! **** So simple and delicious my so was slurping it up before he even knew what was in it. I thought he hated tomatoes—apparently not. Like others, I didn't peel or seed the tomatoes, but pureed everything right in the pot. I enjoyed the texture of the small seeds. Thank you for this delicious recipe! We had it with grilled cheese made from the Amish white bread recipe I found here and make every week.

Delicious! I love eggplant and would make this several times a month, but I'm the only one in the family who eats eggplant. I do occasionally make this and take it for lunch several times a week.

Vegetarian Meatloaf

Very tasty and held up well! I'm the only vegetarian in the house so I scaled down the ingredients and made a small one for my dinner. I didn't use the BBQ sauce and I made a sauce for the top made out of brown sugar, ketchup, and mustard. It made a tasty glaze to the delicious meatloaf.

Corn Dogs

This was my first time making homemade corn dogs and it's a lot of fun and not as much trouble as I thought. The batter is delicious and tastes better than the frozen kind (I left out the pepper because I don't care too much for pepper in certain foods). I'm a vegetarian so it's been a long time since I had one at the fairgrounds, but my corn dogs made with Morningstar Farm veggie dogs came out perfectly and tasted like I remember them. Will definitely place this in my permanent recipe box. Thanks!

My Best Clam Chowder

Followed this recipe to the T, but thought it was too thick at the end. My son loved it and he said it didn't sound good, but he raved about it and wants me to make it again. I complained about it being too thick, but he wants me to cook it that way again. However, I'm going to decrease the flour some and I don't think I used as much water as I should have to "cover" the vegetables. I wish there had been an exact amount listed, but I will increase it next time. I will also buy some clam juice for more clam flavor. But this is a great base to spring from. Thanks!

Leek and Cheese Quiche

Excellent quiche recipe that can be modified for any ingredient you'd like to include. The only things I did differently were to add a little nutmeg to the cream/egg mixture,didn't put the tomatoes on top because I don't like baked tomatoes, and I used a homemade pie crust that wasn't frozen. This led to the edges being burned during the 15-min. first heating, so I will either freeze the crust in a pan next time, or play around with the temps. Thank you so much!
