Cheesy Ranch Potato Bake

This simple potato dish turned out way better than I had hoped. I'm choosey about my Ranch dressing, so I picked the brand I like best: O'Charley's. I did use the entire 16 oz. of the dressing in the casserole and I'm glad I did. It was rich and creamy mixed in with the melted cheese. Thanks for this great side dish that my husband and I really enjoyed! Oh, and I didn't think the butter made the dish greasy, although the creaminess of the melted cheese and dressing would probably mean you could leave it out altogether.

Cajun Crab Cakes (No Breadcrumbs)

So flavorful with all the spices and you can taste the crab because of the lack of breadcrumbs that are so much a part of other crab cake recipes. I broiled mine and they were light and tasty. I'll try frying and baking in the future just to see what a difference it makes. Thanks for the wonderful recipe!

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

We followed this recipe to a T and we did not care for it. I make homemade alfredo and was expecting this to be creamy and saucy, but it was bland and dry. What a waste of boursin cheese.

Blackberry Pie I

Very delicious yet simple recipe for blackberry pie. The blackberry seeds were a little crunchy; not sure what can be done about this unless the blackberries, flour, and sugar are cooked a little beforehand on the stove to soften them up some.

Speedy Oven Fudge

Fudge intimidates me, but I mastered this one. Cooked according to instructions and it came out perfectly. Poured it into a buttered 11x7 dish and it cuts beautifully. I forgot to add the vanilla, but it's still tasty. Thanks for the recipe. It's a keeper!

Egg in a Boat

I saw this cooked in the movie Moonstruck back in the eighties. I tried it for the first time yesterday and loved it. I used a nice, dense piece of white bread. I cut out a hole with a small jelly glass, melted some butter in a pan, laid the bread down to brown, cracked an egg into the middle, added a pinch of salt and pepper, then flipped it to brown on the other side. Delicious! I don't like runny yolks so I cooked mine till just done. I spread a little grape jelly on the bread and cut a piece of toast and a piece of the egg for the perfect bite. An easier way of eating egg and toast, if that doesn't sound too odd.

Boudreaux's Zydeco Stomp Gumbo

Excellent gumbo recipe. I made this weeks ago but didn't have any cajun seasoning or red pepper, but the 1/4 cajun seasoning and the pepper really spices this up and makes it delicious instead of just good. I made the roux a dark brown and let the cajun seasoning heat up with the roux. I also used half a cup of olive oil and added some butter to make the roux. I know, it's annoying when people make changes in the recipe, but this recipe is good just as it is or gives you some wiggle room to change things up a bit and make it your own.

Cajun Crabmeat Au Gratin

Pecan Turtle Bars

Followed to a T and used a 13x9 pan. My bars were so flat and looked nothing like the other recipe photos. Very buttery but has a good taste. Won't make again, though.

Creamy Pimento Cheese

The best pimento cheese spread I've ever made or tasted. I've tried recipes before that was too simple: mayo, cheese, and pimentos. I think a great pimento cheese recipe calls for more than that, and this recipe has it. I also added the pimento juice and the pimento flavor is incredible. I only had a medium cheddar, but I believe it would be better with extra-sharp, which is what the recipe calls for. Thanks for sharing!

Barbecued Shrimp

I'm giving this four stars because my husband loved it, but I thought it was way too peppery and garlicky. I woke up in the middle of the night tasting these spices, and, yes, I did brush my teeth before going to bed. It's similar to a recipe I found in a coveted cajun recipe book, but that recipe does not call for so much pepper or garlic and it's much tastier, IMO.

Aunt Edith's Baked Pancake

I was so sick of frozen waffles and traditional pancakes, so I tried this easy recipe. I slid it onto a big plate, cleaned off the center of the kitchen table, and we tore off big chunks and put on our plates to drizzled with maple syrup. Very delicious and one of my favorite new recipes to make. Thanks!

Chili Sauce Chicken

I don't eat meat, but I have started cooking more meat for my husband and child. My husband loved this dish! I tasted the sauce and thought it was a little heavy on the basil, but he didn't complain. I didn't have any chicken broth or white wine, so I'm wondering if that would have added even more flavor. Definitely a keeper. Thanks!

I made this for a family get together and everyone raved about it. I served it with a scoop of good vanilla ice cream, and the creaminess of the ice cream with the sweet, crumbly topping was out of this world. It was easy as pie to make, too. Thank you so much!

Double Fudge Kahlua Brownies

Perhaps I did something wrong? The brownie was so dry it was almost inedible. I sifted the flour and THEN measured 1 1/3 cup of sifted flour. Is this right? Or is it 1 1/3 cup flour, sifted.

Mushroom and Potato Chowder
