Chicken and Red Wine Sauce

Did not hit my wife and I as special. We generally love anything that includes wine in the preparation, but this did not shine brightly.Might work better with thighs as the breasts remained somewhat dry in the end.

French Salad Dressing

Used half the sugar 1/2 cup olive oil and found that it's a better consistency when pureed in the blender. Best home made French dressing I have found so far. I will try a lighter vegetable oil next time, however.

Garlic-Lemon Double Stuffed Chicken

Baked up 2 breasts. The lemon juice/flavor was pretty much evaporated once the baking was done, I will try again with adding the sauce later, or at lease the lemon juice. But the breasts were tender and tasty from the garlic side of things. I would like to generate more sauce for adding to the rice in the future and may add some spices to the cheese "stuffing".

Chef John's Smothered Pork Chops

Made this pretty much as written and it will be used again. Made up the gravy for 4 chops but only cooked up two. I had extra left, but that was fine because it was really good. Thanks Chef John!

Tomato Bisque III

Great recipe! I did not find the fire roasted tomatoes and I'm not sure my wife would like them anyway, but a 28 oz can of petite diced (undrained) worked great. I used half the sugar and also added some sweet basil (~12 small leaves) for our tastes. I tasted it before and after the cream addition and actually like it better without the cream. Panera may have lost a soup customer!

Apple Glazed Pork Tenderloin

We liked this. The pork was tender and tasty and the apples were just starting to soften at 30 minutes in the oven. I prepared it as described and I would agree with other reviewers that less jelly would make sense. I also wondered if it would work well with center cut pork chops in a saute pan on a lower heat to reduce the liquid to a thicker sauce.

Chicken with Quinoa and Veggies

Made this last night, pretty much as written. The combination of flavors was a winner. When I prepare it the next time, I will consider keeping the tomatoes out until I put the chicken back in so they don't cook down as much. I agree that this is a great base to experiment from with different veggies and other meat combinations. The quinoa can easily be switched out for rice or noodles.
