Easy Lemon Cookies

So ridiculously easy, they worked great to be able to make really quickly and take to a get-together where everyone RAVED about them. I almost never use mixes for things, but it made these cookies to easy it was hard to resist. The recipe itself is probably 4 stars as written, but I changed a few things out to make them healthier and use what I had on hand. Instead of the oil, I used unsweetened applesauce, and I used the zest of one lemon and the juice of half in place of the lemon extract which I don't keep around. I also stuck the dough in the freezer for a couple of hours to make it easier to roll in the powdered sugar. They turned out really light and fluffy with a nice lemony (but not too sweet) flavor. I would recommend these, but I think I'm also going to try and find a lemon cookie that doesn't come from a mix to compare.

Chocolate Crinkles II

These are FANTASTIC! I have always loved crinkle cookies, just had never made them myself. I was looking for a little chocolate fix earlier this week, and didn't have too many things in the pantry to work with, but I had almost enough cocoa powder to make 1/4 of this recipe. They turned out absolutely amazing. I took the advice of another reviewer and stuck the batter in the freezer for about 25 minutes (didn't take long with a small batch), but they were not sticky at all when I rolled them and threw them in the powdered sugar. Aside from not having any whole eggs, so I had to sub egg whites, I followed the recipe exactly, they crinkled perfectly in the oven, and they are now my new favorite cookies to make! I love so much that they don't contain any butter and very little oil. Thanks for the awesome recipe!

Spicy Garlic Lime Chicken

I LOVE this recipe! My husband loves it too, which is even more incredible. I follow everything exactly, except that I do not add the extra garlic powder at the end. I felt like it would have been too much, and we love it without it anyway. If I'm making more than about a half pound of chicken, I always make at least double the spice mixture. I also might trying to use less butter when cooking it, as it tends to brown a little quicker with it, and it risks burning the edges of the chicken.

Vegetable Lo Mein Delight

This was a good starter recipe, especially for the sauce. We like to change up the veggies and add chicken or pork, and sometimes use egg noodles or other Asian noodles instead. I think the key to not having it turn out uber salty is to use low-sodium chicken broth AND soy sauce. That way you can add your own amount of salt to taste. I also like to add fresh garlic and ginger, or even red pepper flakes. And I add the noodles just at the end of cooking, so it will really absorb some of that flavor from the sauce and veggies.

Red Velvet Cookies

These cookies are so delicious, and pretty easy to make. I took the suggestions of a few other reviewers, and it helped immensely. One thing I did was put the dough in the fridge for at least an hour before I baked them, unless you want uber-sticky dough and completely red hands afterward. Another suggestion I used was to flatten them slightly on the pan before I stuck them in the oven, which really helped to bake them evenly. Lastly, instead of nuts, I dark chocolate shavings on top. I thought it really added to the flavor of the cookie, and made them so pretty!

Sea Bass Cuban Style

This recipe is nothing short of fabulous, ESPECIALLY when using sea bass. I've made it with cod as well, and it was still very good, but the sea bass really seems to pick up the flavor so nicely. I just made a few changes, based on my taste, so I omitted the onions and added some artichoke hearts (not marinated) and some roasted red peppers from the jar. I also added some extra red pepper flakes - I like things spicy - and it was absolutely amazing!

Florida Strawberry Muffins

The idea of these muffins sounded really good, but when I made them, I found they lacked a lot of flavor and weren't as fluffy or moist as I hoped they would be. If I'm going to put strawberries in my muffins again, it will be using a different muffin batter.
