Classic Caramel Corn
So awesome. I have never made caramel corn before, as I'm not really a fan of it. But my husband loves it and I figured it would be a good snack to have out at Easter, and wow was it well-received! I even loved it! I used a little extra popcorn, just so they would have a lighter coating, and sprinkled it all with a little sea salt. I also took half and threw in some cashews and drizzled it with milk chocolate, and it was absolutely amazing! I will be making this A LOT!!

Easy Lemon Cookies
So ridiculously easy, they worked great to be able to make really quickly and take to a get-together where everyone RAVED about them. I almost never use mixes for things, but it made these cookies so easy it was hard to resist. The recipe itself is probably 4 stars as written, but I changed a few things out to make them healthier and use what I had on hand. Instead of the oil, I used unsweetened applesauce, and I used the zest of one lemon and the juice of half in place of the lemon extract which I don't keep around. I also stuck the dough in the freezer for a couple of hours to make it easier to roll in the powdered sugar. They turned out really light and fluffy with a nice lemony (but not too sweet) flavor. I would recommend these, but I think I'm also going to try and find a lemon cookie that doesn't come from a mix to compare.

Chocolate Crinkles II
These are FANTASTIC! I have always loved crinkle cookies, just had never made them myself. I was looking for a little chocolate fix earlier this week, and didn't have too many things in the pantry to work with, but I had almost enough cocoa powder to make 1/4 of this recipe. They turned out absolutely amazing. I took the advice of another reviewer and stuck the batter in the freezer for about 25 minutes (didn't take long with a small batch), but they were not sticky at all when I rolled them and threw them in the powdered sugar. Aside from not having any whole eggs, so I had to sub egg whites, I followed the recipe exactly, they crinkled perfectly in the oven, and they are now my new favorite cookies to make! I love so much that they don't contain any butter and very little oil. Thanks for the awesome recipe!
