Mom's Fabulous Chicken Pot Pie with Biscuit Crust

My husband and kids really liked this! I poached individually frozen chicken breast in the broth to cook it and used the liquid to make up the sauce as directed. Didn't have thyme but used poultry seasoning. A definite make again

Cheese Blintzes II

These were delicious! Be sure to use full fat cottage cheese - I used low fat (what I had on hand) and it went runny when baked, but the taste was fantastic! I doubled the batch and made some plain crepes for the kids and had just enough filling, ending up with 12 filled crepes and 8 plain. I will definitely do this one again

Sorta Salisbury Steak

This was a perfect cold night, warm tummy meal! Be sure to season the steaks as you brown. And double check the seasoning again as you make the gravy. I used low sodium beef broth to keep it from getting too salty, then added a pinch to the gravy. I also added fresh mushrooms with the onions. To add the flour without lumps, mix 2 heaping TBSP flour with about 1/2 C cool water in a shaking jar (cleaned jam jar, gladware container, canning jar with lid etc.) Shake until the flour is incorporated (no lumps) and add about half to the boiling cooking broth with fast stirring. Let boil a bit to check how thick it will be and add more if necessary.

Taffy Apple Cake

This seems to be a love it or hate it recipe! it seems OK I guess, but I've had better. I cut the sugar back by 1/3 cup (I also used granulated instead of icing sugar - 2C). I increased the apples to 3 medium granny smiths - but didn't chop them fine enough. I should have added the whole bag of caramels too. I note that there is no leavening agent in the recipe, which is why most are saying that it is heavy. 2 tsp of baking soda fixed that - the cake is not heavy. I also added 1/2 tsp of salt for flavoring. The cake is not too sweet now, so I am adding a caramel frosting to improve the flavor.

German Apple Pancake

This is a fabulous oven pancake suitable for guest presentation! I am going to make it for Christmas morning. My family loved it! Please note: This is not a cakey recipe like a stove top pancake. The batter has a thicker crepe-like consistency. If you have ever had Dutch Pannekoken you will probably like this. Be sure to add all the sugar (it won't need any syrup, just whipped crea and a dust of cinnamon), increase the cinnamon in the recipe as suggested by others. I used tart apples from our own tree (about 3 cups sliced) and cooked them in the sugar mix for about 2 mins on the stovetop. I only let the batter sit about 10 mins and everything rose beautifully. If your pancake does not perform as expected, check the expiration date of the baking powder - if you don't bake a lot and use it up consistently it can expire and not work as expected. Also be sure to use baking powder not baking soda! (LOL) I suspect that these might be the reason some did not get their pancake to rise.
