About this Cook
My favorite things to cook
I like cooking Mexican food and trying recipes with a Mediterranean flavor. Baking at Christmas is also a favorite.
My favorite family cooking traditions
When I was a kid, I thought my mom made the best pumpkin pie. It had a great warm caramel color and yummy spices.
My cooking triumphs
My homemade cookbook. Instead of saving stacks and stacks of back issues of magazines, I now tear out the ones I think look good and file them in a three ring binder. You'll also find recipes from, family favorites and other cookbooks from the library. Any time I am stumped on what to make for dinner, I just turn to it.
My cooking tragedies
I ruined a great cut of meat trying to improvise broiling it without a broiling pan. It was so frustrating. I've also had hits and misses with cookies-- some turning out flat and crispy. But I think I recently found a great recipe with great results.

Easy Chicken Balls
I found this recipe since I had ground chicken on hand and needed some inspiration. I ended up using Cheez It crackers because I didn't have any other kind. I also ended up turning the balls into patties like another reviewer when I couldn't roll them in the pan very well. While I thought they turned out okay, my kids weren't big fans, so not sure I will try this recipe again.

Amish Friendship Bread III
This is a great version for friendship bread. I love the apples and cinnamon combination. This recipe also has a lot less sugar than other friendship bread recipes and doesn't require pudding mix, which I rarely have on hand. My family thinks the bread is a real treat. I put one loaf in the freezer while we eat the other one as breakfast.

Garlic Parmesan Chicken
I thought this recipe turned out super yummy! It's probably because of the butter and French fried onions. I used boneless breasts and cooked for 20 minutes. It was easy to put together too. I kept nibbling the crunch onion pieces in the pan. Husband also loved the chicken, four year old son, not so much.
