Roasted Onions

Super awesome. I checked the level of "doneness" by touching them. They needed about 8 mor minutes than the recipe called for. Be sure to test them before taking them out. They want be very good if they're not cooked enough. The bottom sides caramelized beautifully. I even forgot the balsamic and everyone loved them. Yum!!

Halibut with Rice Wine

YUM. Easy and good. Be careful not to use too much sauce. It is yummy but could overpower the fish if you use too much. Company dish.

Pesto Scrambled Eggs

Ummm, yum. Easy. I used a pesto with a bit of cheese already in it and omitted the cheddar. Watcin' the waist line. Still yummy.

Oven Roasted Potatoes

Greek Squid (Soupies)

MMMMM, this was easy and good. It did take more time than the recipe suggested (as noted by others). It took much more than 10 minutes for the juice to reduce (at the point before you add the wine). Still, it was just lots of simmering--not much to it. Tangy and tender.

Swordfish a la Siciliana

Mmmmm. I don't even like swordfish. This preparation is great. I have used similar ones, sans the pine nuts and rasins. They were a bit acidic. The raisns and pine nuts balance the acidic tomato, capers and olives. I forgot to buy tomatos. I used a can of stewed tomatos. Super YUM!!!

This is a great recipe. Yummy, easy and fast. Be careful of the cooking time. 25 minutes might be WAY too long. Hence my 4 star rating.

UMMMM YUM!! This was so yummy. I took the advice of others and simmered it for longer. I also added some cayenne and crushed red pepper. You can use any kind of seafood. So good.

Grilled Tuna Steaks with Grape and Caper Salsa

This recipe was SO EASY. It was also really yummy. I broiled the tuna steaks---careful not to overcook them. The next time I make the recipe (i will definitely make this again), I will make the salsa and let it sit for a little while so all the flavors can mix. This is a great come home from work tired meal. YUM.

Oven Roasted Trout with Lemon Dill Stuffing

This recipe was easy and yummy. Make sure the fish doesn't over cook-account for the residual cooking time. I halved the recipe and cooked two trout for 12-13 minutes. It was perfect!!!

Tofu Quiche with Broccoli

I really liked this recipe. Simple and good. I omitted the nutmeg and added more salt and some soy sauce-I was worried it would be a little sweet-it was savory. MMMM good.
