Marinade for Steak I

Authentic Green Goddess Dressing

Best Tuna Casserole

Good recipe but I tweaked it some. Used a big can of cream of mushroom soup (26 oz) with 3/4 cup of milk (would use 1 cup next time). Added 2 TBSP of pimentos and topped with Durkee fried onions instead of chips. Would really be good with small can of sliced water chestnuts. Good basic recipe.

Authentic Louisiana Red Beans and Rice

Everybody seemed to enjoy this, including four kids. Good flavors, though it really needs salt. (I can't understand why the recipe was published w/o salt or pepper. I added 2 tsp. of salt and 1 tsp of pepper. Conservative amounts for both.) A tbsp. of sherry cooking wine seemed to help, too. I used Trader Joe's fully cooked andouille sausage. The recipe doesn't specify cooked or uncooked. Personally, I'd be uncomfortable adding uncooked pork sausage for 30 min. while on a low simmer. If using uncooked sausage, I'd consider either pre-cooking (e.g., parboil) or adding to the pot for a longer period of time.

It's Chili by George!!

Wow, this is a great recipe (although I admit to altering without trying the original). Spent all day out in the cold, only to come in tonight to a steaming crock pot full of delicious, hot chili. Quite a treat. Like others noted here, I used V8 juice instead of tomato, and I held back about 1 1/2 cups and replaced with 14.5 oz. S&W Cajun stewed tomatoes (nice flavors in this brand, including allspice). I also added 1/2 tsp. cocoa powder, 1/2 tsp. cinnamon, 1/2 tsp. garlic powder and replaced 1/2 tsp. of white sugar with 1 tbsp. brown sugar. Fed it to a group of 7, and there were raves around the table. Thanks, George.

Lima and Navy Bean and Ham Soup

I was really excited to make this recipe, but after 8 hours (!) of cooking, at least 1/3 of the beans were undercooked. Not sure what I did wrong, though, the instructions were unclear about whether the pot should have a lid. I opted to let it cook uncovered, and I found myself adding water regularly. Maybe the beans just didn't have enough water. Also, the recipe was pretty spicy, even with mild/sweet Italian sausage. Very salty, too. (It's if the recipe almost has TOO much flavor.) Fell somewhat flat at our family dinner table. Won't do again.

Chicken Pot Pie IX

Good all-around chicken pot pie. Kids loved it. I added 1 TBSP pimentos and small can of mushroom pieces. I'd like to try it with frozen peas and tiny onions next time. Will make again.

My Chili

Very good chili. Even though I like a "thinner" chili, this was a little too thin for me at the beginning; it came around, though, after adding tomato paste, brown sugar and a couple of shakes of Worcestershire. I'd also cut the requested salt in half and adjust at the end.

Jim Kaczmarek's Chili

Overall, seemed like a crowd pleaser, but it came off a little "chalky," maybe because of all the spices (and not a ton of liquid). A fairly thick chili, which required a considerable amount of pot-watching, e.g., adding fluids. I ended up adding in all reserved liquids, including opening a new can of tomato sauce I like my chilis a little thinner and more basic, I guess.

Aunt Jewel's Chicken Dressing Casserole

Good recipe; family loved it. Seemed a little "one-dimensional," though. Would add both a can of waterchestnuts and small can of mushroom. A couple of TBSP of pimento wouldn't hurt, either, for some color and pizazz.
