Easy Pumpkin Muffins

My family enjoys these super moist muffin/cucpcakes. I prefer the flavor of a spice cake over the yellow cake mix and added spices combo, however. Instead of mixing by hand, I find using a hand mixer to whip the batter yields a better texture and appearance. Since the batter is so stiff, it doesn't really settle the way other batters might. If you have stiff peaks after spooning into the muffin tin, the baked results with also have stiff peaks. Grease your fingertips and smooth the muffin tops prior to baking for a better looking muffin.

Au Gratin Cabbage

Very good. A friend prepared this exactly as written for a dinner party and it was a big hit. I'm about to prepare it tonight and add garlic as another reviewer suggested and will also top it with panko crumbs for crunch.

Old-Fashioned Vanilla Pudding

The wonderful depth of vanilla flavor and smooth, creamy texture makes this perfect to use in a trifle that includes angel food cake and fresh strawberries and bananas. Delicious!

Peanut Butter Balls III

I knew the combination of these ingredients would appeal to my family's taste however, I wasn't interested in the time consuming task of rolling so many balls. Instead, I halved the recipe, pressed the peanut butter mixture into an 8x8 pan, poured the melted chocolate on top and chilled until firm before cutting into squares. The mixture turned out a little crumbly but I believe this could be solved by using 1/4 cup less powdered sugar. The taste however, is wonderful.

Best Toffee Ever - Super Easy

I'm glad I heeded mom200's suggestion to test the thermometer in boiling water as I discovered mine is basically useless now. Using the ice water method to test for the crack stage worked well in lieu of using a thermometer. I also followed her other directions but found that after the mixture became peanut butter-like in color I need to stir until it reached it reached the proper stage. The end result was delicious. I would however, recommend toasting whichever nut you use prior to adding to chocolate layer.
