Spinach and Feta Turkey Burgers

Kids loved these. Husband thought that they were just ok. Still think that "Actually Delicious Turkey Burgers" are better but this was a nice change and I liked the healthy addition of spinach. ** Made these again for guests, they were a huge hit. I added sauteed red onions, used fresh spinach which I also sauteed and they wer great. Everyone loved!! (including my husband.)

Yummy Honey Chicken Kabobs

Marinated my chicken for about 4 hours. Made as per the recipe. I used red pepper, pearl onions, and tomaotoes on my kabobs along w/ the chicken and had my husband grill the kabobs low and slow and nothing burnt. They were great. Dont forget to soak your skewers in water so they dont burn.

Crustless Spinach Quiche

I thought it was lacking a little in the seasoning dept so next time I will use more pepper/garlic etc. I used a combo of cheddar cheese and monterey jack and used crushed ritz crackers on the top for some texture. It was easy to make so with these additions I would make again. I served w/ turkey bacon and some fresh fruit for an easy supper.

Bacon for the Family or a Crowd

Great way to make bacon. It took me longer than 15-20 min to bake but it was a good easy way to make bacon esp when making a big breakfast that requires a lot of stove top cooking.

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

This recipe reminded me why I dont like dill -- the flavor is too overpowering.We would have liked this recipe with out it (and yes I know that would change the whole recipe.) We didnt care for the flavor of the fish BUT loved using the cedar plank. This was my first time and it will definitely be a staple this summer.

Spinach and Orzo Salad

This was good. I added halved cherry tomatoes for color/flavor. This makes A LOT so next time I will 1/2 the recipe and that would be plenty for my family of 4 for dinner/leftovers etc. I used my own balsamic vinagrette and a few extra splashes of balsamic vinegar. Good and healthy.

Penne with Garlicky Broccolini

Family loved it. Increase bacon to 12 pieces, used turkey bacon. Sauteed all 12 garlic cloves in the turkey drippings along w/ EVOO. Added the brocollini (have made w/ brocolli and "lini" and lini is MUCH better) also wilted 3 large handfuls of spinach and added all of this to whole grain penne along w/ halved cherry tomatoes, more EVOO, more parmesan cheese and I oven fried chicken breasts and sliced and add on top and tossed it all together. Great healthy dinner easy to make and is good at room temp.

This was really good. I served it over spinach fettucine and added some boneless chicken breasts on top that I oven fried. Very good and I didnt have any issues with my sauce thickening.
