Asian Pasta Salad with Beef, Broccoli and Bean Sprouts

Reviewed: Jul. 28, 2006
I give this a 5* but not for the reasons you might think! Please read on. The salad turned out nice. Since my diet really limited the content it wasnt much more than a basic pasta salad with green onions, cilantro and I added some cubed cheddar. I made the dressing with reduced sodium soy and held the pepper flakes and mayo, however, after tasting it I decided to add the mayo, thankfully, it made a great difference for me and I enjoyed it a lot. So here's the kicker and I cant believe the results: I used the basic dressing sans mayo and increased to ½ C reduced sodium soya (I even took a walk on the wild side and used the pepper flakes!) as a marinade for the pork! Fabulous! I loved it, I loved it, I loved it! I will try this again with chicken in the salad or as a marinade! Thanks

Pumpkin Pancakes

Reviewed: Jul. 24, 2006
This was an ok recipe, looked great and tasted very nice. It did seem though, more like spiced pancakes, which is still a good thing! I reduced the flour to 1¾ Cups but they were still very dense and had to be thinned out. I'm definately going to try them again and see how much more pumpkin I can add without compromising the pancakes. Thanks for the recipe!

Rachel's Wasabi Cocktail Sauce

Reviewed: Jul. 20, 2006
This is a "great recipe" especially when using real wasabi rhizome (not the standard coloured horseradish). Once you've tried it and have the flavour experience of your life, you wont ever compromise again!

Bill's Beefuna Burgers

Reviewed: Jul. 14, 2006
Bill, I made your burgers into a meatloaf and it turned out well, nice and moist and a great blend of the two meats. I served it with homemade tartar but the hubby is a die hard ketchup fan and refused to have it with anything but. I had my portion straight up and I give it 4 stars... it was a very nice change from our lunch time routine.

Pecan Praline Cookies

Reviewed: Jun. 19, 2006
I finally manage to scoop this recipe from my aunt to compare with this recipe since a few of the reviews scared me. The recipes are identical except an explicit statement that says: DO NOT BOIL the mix but simply heat and stir until brown sugar is completely dissolved and to let it cool for about 10 minutes before pouring slowly over the graham crackers. This is a little time consuming but definately worth it in the end! Mine turned out just as anuty has always made them :) Update: Apologies, I didnt look at the pan size, my cookie sheet is roughly 12x16 and fits 35 crackers perfectly.

Best Bread Machine Bread

Reviewed: Jun. 9, 2006
After developing arthritis several years ago I broke down and submitted to a bread machine for making my dough. This classic french bread recipe is great but since I only use all purpose flour, I reduce to 2½ C and I've only ever used 1 tsp of sugar. I shape it and let it rise 45 minutes before baking in the oven. If I use quick rise yeast I simply put it on top of all the other ingredients... and use a rapid setting if using the machine to bake it.

Bacon Cheddar Deviled Eggs

Reviewed: Jun. 5, 2006
An excellent and easy switch out for any occasion! Our Mother's Day gathering had several 'low-carb' dieters in attendance and it was a definately a hit with all of them... I think though that my son was a little sneaky and ate a good portion of them!

Barbie's Tuna Salad

Reviewed: Jun. 5, 2006
Ok, this is an update after 'just adding curry' to my own tuna salad recipe back in June. Tan, what a nice change from the usual! I made the recipe with just a little altering... for approx 8.5 oz I used a scant 6T of mayo and upped the curry to ¾ tsp. I really did enjoy this but I have come to the decision that I prefer my tuna salad without relish. It just didnt do anything for me BUT I will be addding the parmesan and especially the curry from now on. Thanks so much for the great idea!

Waffles I

Reviewed: Jun. 5, 2006
For having tried many of the numerous recipes on this site, these waffles were probably as close to what I've been looking for as possible. They were a smidge less crispy than I was hoping but the inside was very nice, fairly light and a great consistancy for the iron. I will make them again and you can thank this weeks 'featured cook - LatinaCook' for having it in her collection of recipe pictures! Thanks

Light, Crisp Waffles

Reviewed: May 21, 2006
I was skeptical about the recipe but I forged on and made them exactly as directed... definately crisp on the outside but waaaaaaay to dense on the inside for our liking. I didnt mind the complexity but not going to make them again, apologies.

YUM YUM YUM.... FOR LOW CARB DIETS! I just substituted 1/2 cup sugar twin brown sugar for the honey and it has just the sweetness my hubby desires on his low carb diet (he's lost 45 pounds since January)! Quick and easy and very tasty! Thanx!

Banana Pancakes I

Reviewed: Apr. 25, 2006
My eldest who normally chokes one regular pancake down for me, ate 2 large cakes and took another to school! I added a splash each of vanilla, cinnamon and mini chocolate chips. I also added close to a quarter cup more of flour to make it to the consistancy I'm comfortable with! 2½ minutes on each side and they made me the worlds greatest mom for the day! Thank you, thank you!

Gordo's Good Venison

Reviewed: Mar. 18, 2006
I'm soooo disappointed! Disappointed that I wasn't able to partake in this recipe! I did all the preparation so all my husband had to do was throw his chops on the grill when he got home. He raved and said they were the best tasting vension chops I've ever made! My 3 yr old loved them too and so I guess I'm going to have to make them again when I can be around to have my fair share! Thanx!

Carrot Cake I

It's March break and the kids needed to fill some time! This was a delightful and easy recipe for them. I made them cut the oil back to 1C and it was still very moist! Flavour and texture were nice and we made it in a 9x13 without icing and it was half gone the first day!

Downeast Maine Pumpkin Bread

Reviewed: Aug. 31, 2005
This is most definately the best pumpkin loaf recipe I've come across... my search is over! I doubled the spices to make it perfect for us! I rate this a 4 is because in the 7x3 aluminum foil pans it takes 70 mins which causes the edges to dry out too much. I will have to experiment with standard size pans to keep the cooking time closer to the 50 minute mark. Thanx for sharing!

Whipped Shortbread Cookies

Reviewed: Jun. 13, 2005
I have found that there are 2 secrets to this recipe that have to be followed or disaster strikes as so many have noted. First, it has to be BUTTER... and nothing but butter. Margarine cannot be substituted for butter. :) The second is the beating time. Personally I abide by the following method: Beat butter by itself for 5 mins. Add icing sugar and beat another 5 mins. add flour in 3 equal portions (1/2 C at a time) beating for 2 minutes after additions 1 & 2 and then 10 mins after the last addition. So thats 14 more minutes than this author says but thats what works for me every time! As well I bake at 300F for 5-7 mins. These are absolutely fabulous cookies... they usually never make it to the serving plate! Yummy!
