Creamy Cucumber Dressing

Added a bit of dill, and replaced regular salt with garlic salt. A bit runny but still tasty. I would suggest removing seeds from the cucumber and blotting it with a paper towel first.

Baked Salmon Steak

I was concerned about what looked like an excessive amount of salt, so I substituted onion powder for the onion salt, and omitted the plain salt altogether, just using the 1 tbsp of garlic salt. It was absolutely perfect. My husband has always said he was not a fan of fish, but he loved this and asked me to make it again.

Raspberry Vinaigrette Salad Dressing

Quite tasty. I substituted olive oil for the avocado oil, and used garlic-infused rice vinegar in addition to the one fresh clove. Thanks for this recipe!

Best Spanish Rice

Not bad, and very easy in a pinch. I used beef broth, since I didn't have chicken. Turned out just as good. If you want to get creative with it you can add diced mushrooms, olives, etc.

Chicken Tikka Masala

I've made this recipe a few times now. It's fairly salty, so we reduce the salt to about 1/4 to 1/3 of what the recipe calls for. Also, my family is not crazy about super-hot spicy food, so I'm only using about 1/3 of the cayenne, and omitted the jalapenos altogether. Otherwise, it's very tasty.

Chicken Tequila Fettuccini

This is a wonderful recipe, and a big hit with my family. but I made just a few modifications. I grilled the chicken prior to making the dish; it kept the chicken from drying out. I also reduced the amount of soy sauce by about 1/3; I felt it would have overpowered the dish otherwise. Lastly, I increased the tequila lime sauce/paste by about 50%. The result was FANTASTIC.

Chicken Cordon Bleu I

This was a hit with my family. Used black forest ham. We are not huge fans of Swiss, so I substituted Dubliner cheese. Definitely adding this to the rotation.

Easy OREO Truffles

Just gorgeous. Impressed a lot of people with these, which is great, because they're so simple. My only problem was, it was hard to roll them in the chocolate without them falling apart at times or getting really messy. I solved that by stabbing them with a bamboo skewer, dipping, and then placing on the tray. then drizzled a little extra chocolate on top to cover the hole made by the skewer. Altogether really delicous.

Chicken Enchiladas I

This was very good, but using all those liquids would really have made it too soupy. Instead of the water, tomato sauce, and taco sauce, I just used a 19 oz. can of red enchilada sauce, using about 1/3 of the can in with the filling mixture, and the other 2/3 on top of the enchiladas in the baking dish. Husband and son approved; this is definitely being put into the regular dinner rotation at my house.

Garlic Butter

Really easy to make and delicious. This has gone on everything from steak to bread. It has replaced regular butter on grilled cheese sandwiches in my house.
