Pecan Butter Balls
I used softened butter instead of margarine. The dough was easy to mix when I used my hands, difficult with a fork. I bought chopped pecans that were not chopped very well, so I re-chopped them and should have chopped them more. FINELY chopped pecans would be best. Also I only cooked for 20 minutes at a time.. at 25 minutes the bottoms burned.

I halved the recipe to 1 egg, 1/2 cup milk, 1/3 cup RICE flour, pinch salt, 3/4 teaspoon vegetable oil. I also added 1/3 cup brown sugar. The RICE flour makes this recipe gluten-free, and it works very well! The sugar is because my parents always made them sweet and we ate them plain.

Basic Biscuits
I just made half of this recipe and finished eating. My biscuits came out flat, probably due to old baking powder. Also I used light butter instead of shortening and I used 1% milk. But they were not hard as bricks, so I ate some anyway. They were tasty and great with a little southern gravy.
