Chocolate-Banana Tofu Pudding

I loved this vegan pudding! To make it a little better for hubby & I, I added 2 Tbl of natural peanut butter, 1 1/2 Tbl of soy protein powder & 1 Tbl turmeric. Delicious! On top of hubby's I put a vegan dark chocolate covered strawberry.

Ghirardelli® Chocolate Bread Pudding

Very good! I made a few changes though. I omitted the nutmeg, vanilla & raisins and added 1 tsp of orange extract & 1 tsp of Grand Marinier. I substituted the 2 cups of sugar for 3/4 cup of Truvia. I love orange & chocolate together! Delicious!

Bread Pudding II

I omitted the butter, added an extra egg, plus I used 8 pieces of bread instead of 6, and 2 1/2 cups milk. I substituted the vanilla for 1tsp orange extract & 1 tsp Grand Marier. Then I added 1/2 cup cocoa powder along with everything else in the recipe. I poured that over the bread and then sprinkled 3/4 cup chocolate chips. Wham! Orange chocolate bread pudding! It don't get any better! Loved loved loved it.

Roasted Vegetables

I loved this! It was so easy to make and delicious. Instead of balsamic vinegar I used balsamic glaze. My veggies included, the potatoes, sweet potato, sweet red peppers, sweet Maui onion, yellow summer squash, zucchini and Brussels sprouts. I cooked it in the large Pampered Chef Casserole Stoneware. Came out perfect! I will definitely make this again and again!

Bold Vegan Chili

This chili rocks! Not only is it easy but it's super cheap to make. I added a can of carrots to mine and omitted the molasses and instead added a Tbls of unsweetened cocoa powder. Man was it good! Loved loved loved it;-)
