Best of the Best Blueberry Muffins

Reviewed: Jan. 30, 2006
This was ok because it just had way too many blueberries for my taste. The muffins were mushy due to all of the blueberries. After filling in 12 muffin cups, I still had about half of the batter left. Mixed up half of the ingredients (except blueberries) and added to the first batch of batter. With more batter and less blueberries, a better muffins came out. Thanks.

This was ok. It is a little bland as is. Adding sweet pickled relish and yellow mustard improved the taste. Thanks.

Sweet Spicy Wings

Reviewed: Dec. 20, 2005
Very very good! I couldn't find Louisiana-style hot sauce so I added all the spices to regular buffalo wing sauce I bought at the store. It made the regular sauce extra ordinary and extra delicious. I added more cayenne pepper for extra heat. Poured the sauce over baked chicken wings and tossed together just before serving. People were licking the sauce off their fingers! Thanks for the great recipe!

Bill's Sausage Gravy

Reviewed: Nov. 21, 2005
Great! I didn't have any sausage and so I omitted it and followed the recipe as directed. This makes very good basic white breakfast gravy! Next time, I will try with the sausage. Thanks for the great recipe!

Classic Tiramisu

Reviewed: Nov. 7, 2005
Delicious! I used mascarpone substitute, 2/3 cup of sugar, strong coffee (1/2 cup water with 2 teaspoons coffee) and three (3 oz) packages of ladyfingers to make 12 individual servings. I used hand-held electric mixer when cooking the egg yolks/sugar. It is a lot easier than using a whisk for whole 10 mins. I made it two days before serving, refrigerated until ready to serve and dusted with cocoa powder just before serving. The guests loved it and think I am a culinary expert! One guest’s (man in his 50s) eyes lighted up like a little kid in a candy store after he took the first bite. Thanks for the great recipe!

Mascarpone Substitute

Easy, delicious and money saving substitute. No one even noticed or suspected that there was no real mascarpone cheese in the tiramisu. Thanks for the great recipe!

Meaty Spaghetti Sauce

Reviewed: Nov. 7, 2005
THE BEST! I was making meatballs so I made this sauce without the meats. I basically followed the recipe; only changes I made were to add additional 1 tablespoon of minced garlic (as garlic lover), add additional 2 (15 oz) cans of tomato sauce (sauce was too thick), add 1 (28 oz) can of pureed tomatoes (sauce was too thick), add additional ½ teaspoon of crushed red pepper flakes (for extra heat), add 2 teaspoons of soy sauce (for flavor and deep color), replace honey for the sugar and add additional 1 tablespoon of honey (for little bit of sweetness). My husband and 8 other guests raved! Easy, simple and delicious! Thanks for the great recipe!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Reviewed: Oct. 28, 2005
This was ok. It was a little too bland for my taste and so I had to add a lot of salt and pepper. I used canned sliced mushrooms so I didn't saute the mushrooms and just added along with the shrimp. I used only 3 tablespoons butter, double the amount of cream cheese, milk instead of water, and sprinkle of grated Parmesan cheese (for additional seasoning and flavor). Quick and easy to make. Thanks.

Best Bruschetta Ever

This was good but a little too greasy. Next time, I will cut down the oil. I served over crackers because I didn't have any slices of bread. Quick and easy. Thanks.

Cheesy Potato Casserole

Reviewed: Oct. 21, 2005
This was good. I used Velveeta cheese, 1 cup mayo, 1 cup sour cream, southern style potatoes, and a 2 oz of real bacon bits mixed in and 1 oz of bacon sprinked on top. Instead of baking in the open, I put it in the crock pot on low for several hours. (I had to bring to a dinner right after work; no oven at my work place.) I couldn't get the cheese to melt in the microwave smoothly without burning the sides-so had some clumps. But that was ok, it all melted in the crock pot. People at the dinner seemed to enjoy it. I thought it was little bit too cheesy but still very good. Thanks for the recipe.

Cheese Cake Cups

Reviewed: Oct. 20, 2005
These were easy, fast, and tasted pretty good. After reading some of the reviews, I changed up some things. Also, I only had one pkg of cream cheese so I had to adjust the ingredients accordingly. For the Crust: The wafer cookies were too small for regular muffin size and too big for mini-muffin size. So, I crushed 20 wafer cookies and mixed it with 2 tablespoons of melted butter. After lining the muffin pans with cupcake papers, I put tablespoon full of crushed cookies to each muffin pan. I had exact amount of crushed cookies for 12 cupcakes. I used a measuring cup which fit nicely in the muffin pan to press the crushed cookies to the bottom. Very easy! For the Filling: I used one pkg of cream cheese, added 1/2 cup of sour cream, 1/2 cup of white sugar, 1 egg and 1/2 teaspoon of vanilla extract. Filled each cup evenly and baked it for 20 mins. After it cooled a bit, I put it in the refrigerator to chill. I read in other reviews that cheese cake cups sink afterwards. Well, it sinks quite a bit - about 1/2 inch deep, which provides you more than enough room for your favorite filling. My choice of filling is strawberry (fresh, frozen, or pie filling). With filling and all, I thought it was little too sweet for my taste. Next time, I think I will use a little less than 1/2 cup of sugar. Thanks for the great recipe!

Italian Spaghetti Sauce with Meatballs

Reviewed: Oct. 14, 2005
These meatballs were good. It was little soft (even after adding extra 1/4c of bread crumbs) and bland for my taste. Next time, I will add more bread crumbs, some salt and/or more grated Parmesan cheese, and perhaps fresh minced garlic for more garlic flavor. Thanks for the good recipe.

Best Marinara Sauce Yet

Reviewed: Oct. 14, 2005
This was great. Much thicker sauce than I thought it would be. I used crushed tomatoes, 2T dried parsley, about 3 cloves garlic, omitted white wine, added 1T sugar, and 1/2t sweet basil. My husband thought it needed to be a little more sweet so next time I will add 1.5 to 2T sugar. I threw all this in a crock pot on low for 5 hours. Easy, simple, and delicious. This served only 4 servings in my family. Thanks for the recipe.

Little Nut Cups

Reviewed: Oct. 11, 2005
These were ok. I love the filling, just like pecan pie. However, I wasn't really fond of the crust/dough. It was a little bland and had too much of flour taste to it. And it was little too hard to make a shell in mini-muffin cups. But the filling is 5 stars all the way. Thanks for the recipe.

Spam on the Go

Reviewed: Oct. 4, 2005
This was just ok. Adding some garlic powder and a pinch of sugar really helped with the flavor. Also, seasoning the noodles first and then adding the spam is better. Folloing the directons, spam absorbed the seasoning before the noodles. Thanks.

Best Carrot Cake Ever

Reviewed: Oct. 4, 2005
This is great! I halved the recipe and made it in a bundt cake mold. I used a little more of grated carrots than was called. Microwaved the cream cheese a little to soften up a bit and drizzled it on top. The cake was moist and had the just right amount of sweetness. Thanks for the great recipe!

Awesome Slow Cooker Pot Roast

Reviewed: Sep. 27, 2005
This was great! I only had 1.86 pounds of meat, so played around with the ingredients. Used one can of condensed cream of mushroom soup, one package of dry onion soup mix, 3/4 cup of beef broth, added several dashes of Worcestershire sauce and a tablespoon of minced garlic. Seasoned the meat with garlic powder and black pepper. I like veggies in my pot roast, so threw in some potatoes, carrots, onion, celery and canned mushrooms on top. On low for about 9~10 hours. The result was amazing - tender, juicy meat and very flavorful veggies. Thanks for the great recipe!

Slow Cooker Beef Stroganoff I

Reviewed: Sep. 23, 2005
This was good but best of all very easy to make. I just dumped everything in the slow cooker per directions before heading out to work. (Oh, used beef stock instead of water.) It literally took 10 mins to do this. When I came home about 8 hrs later, I added sour cream because that's what I had. Served over noodles with some cooked veggies. It was a simple and quick dinner. Thanks for the recipe.
