Chicken Stir-Fry

Delicious... I added some extra soy, ginger, substituted a couple of cloves of fresh garlic for the powdered, and added a tablespoon of brown sugar. Also subbed some low-sodium chicken broth for the water/boullion.

Awesome Eggplant Rollatine

Instead of frying the eggplant and rolling it up I baked it, and then layered the sauce, eggplant and filing like a lasagna

Best Bruschetta Ever

Thank-you for the great recipe! It was a hit with everyone! I adjusted it a little: I used fresh basil, only chilled the mix for an hour. I then toasted a sliced beget, and topped it off with the mix and returned to the oven to warm every up.

Andrea's Pasta Fagioli

Delicious soup! Although next time I make this I’m going to add only ½ - ¾ lb of pasta, simmer it covered, add an extra can of beans and sweet Italian sausage. My first attempt came out more like a pasta dish rather than a soup, sue to simmering uncovered and way too much pasta.

Zippy Egg Casserole

This recipe made my new year's morning. Being the morning after new year's eve I wanted something extremely easy to cook & I had a crowd of about 20 people to feed. I did all the prep work the day before & just threw the cassaroles in the oven in the morning. I did mix of the flavors (ham & broccoli, veggie...) & chaged up the cheese in some of the cassaroles. Thank you for the great recipe!

Chocolate Orange Truffles

These chocolates are delicious and so easy to make! They've been a big hit with everyone. I took the advice of others and let my filling sit over night. It was actually so stiff the next day that I added more liqueur. I did triple the recipe, and ended up with 50+ chocolates. I used one bag of chocolate chips for the filling and one for the coating. I think next time I make these I invest in a higher quality chocolate.

Coconut Cream Pie I

A great & easy pie to make. I used 1/2 vanilla pudding and 1/2 coconut. Using all coconut would have been too sweet for me. Go easy on the coconut sprinkled on top - I added too much & it was a little overwhelming.

Chicken Marsala

Everything smelled delicious when I was cooking it, but it was disappointly bland. I used two types of mushrooms, doubled the sauce and used the best wines I could find. I'm not sure what this recipe needs but I will not make it again.

Black Bean Vegetable Soup

I took the advice of others and halved the vegtable stock and then added an extra can of beans. I also used a spicy salsa instead of the tomatos to give the soup more flavor. Instead of using a blender I just mashed some of the beans while it was simmering. On my first bit I thought it was a little bland still - but after adding tobasco, salt & pepper it was delicous!! Thanks for the great recipe!!!
