Sugar Free Granola

This is a tasty version of a less sweet granola. Correct, this recipe doesn't have added sugar, therefore it could be labeled sugar free. Correct, this recipe has plenty of natural sugar. However it also has plenty of starch, both of which cause a blood sugar rise in a diabetic. Diabetics, eat this granola with caution. The recipe yielded 13 cups when I made it, as written. I put it through a nutrient analysis and per 1/2 cup - 237 calories, 11 gms fat, 31 gms carbohydrate, 5 gms fiber. Hope this helps, Karen, Registered Dietitian

Good recipe. I halved the butter and it was plenty. Next time I will use less sugar as it was a bit too sweet for my taste.

Mashed Turnips with Caraway

I do not like to have to choose a rating when I change a recipe, but am forced to do so! Due to the fat content, I made changes and used low fat sour cream and margarine. It tasted pretty good. Caraway is an interesting combo with turnip.

Pork and Hominy Stew

I used a can of low sodium chicken broth and the rest water. Otherwise followed the recipe. I didn't add any chili mixture to my bowl. I'm wondering if the Chili heat keeps one from realizing that the stew has no flavor! I didn't even finish the bowl I served myself. Just no flavor. If my husband wasn't willing to eat the rest of the stew I'd throw it away.

Chicken Soup with Drop-In Noodles

I may have given this soup 3 stars if it wasn't for the "noodles." They didn't work at all. The mixture quickly turned to a dough and had to be rolled and cut to be salvaged. My husband said they added a different texture to the soup, but nothing more. The dogs ate the rest of the noodles and I will add some boxed pasta to the soup. If salt if the taste you want, then this is the recipe for you. I omitted the bouillon and used reduced salt canned broth for all the liquid. Even so there wasn't much flavor other than salt.

Oatmeal Apple Muffins

Pretty good muffin for a healthier muffin. Used applesauce rather than apple, milk (less of due to applesauce), and regular oats (soaked in liquid ingredients while measuring dry ingredients and spraying pans).

Fruity Curried Lentil Salad

I don't like to rate a recipe that I changed, but there doesn't seem to be any way around it. I cooked 1/2 cup of lentils in 1c. p/a juice/water and spices as called for. Then added 2 c. cooked quinoa, 1/2 c sweetened coconut, 1/3 chopped pecans and about 1 c crushed pineapple. I liked the sweet with the curry. Tomorrow I will try it cold with leftover chicken, and the onion I forgot to add.

Blue Moon Salad

I tried the salad without the cheese as previous rater suggested. Way too much bite from the vinegar! Feta helped balance the bite. I added honey to the rest of the salad (without cheese)and liked it best that way. I really like the cabbage/radish/apple combo and will work on a variation of the vinegarette dressing. Nice change from coleslaw.

Moroccan Salmon Cakes with Garlic Mayonnaise

Pretty tasty salmon cakes! I used a whole egg rather than two yolks to get the binding properties of egg white. I filled a 1/3 cup measure with mixture, patted it in, then shook it out into my hand and flattened it a bit before frying. This worked well. The next day I cooked the remaining mixture on the Foreman grill. No problems with the patties breaking apart! I sprayed one side of the patties generously with Pam, then put that side on the grill and sprayed the top generously before closing. I cooked them about 2 minutes until the tops were well browned. Using the tool made for the grill, the patties lifed right off.

Overnight Caramel Pecan Rolls

Very good! Everyone at the breakfast raved about these. I doubled the caramel pecan topping as many suggested, but it was too much sweet goo for me. I will double the pecans, but not the rest of the topping next time.

Carrot Raisin Bread or Rolls

I used half whole wheat flour. This recipe makes a good product, but I didn't find the flavor much different than bread with raisins in it. I will use this as a basic recipe and adjust spices/flavors.

Asian Roll Lettuce Wrap

I wasn't in a mood to be fussy and make meatballs, so I fried ground chicken mixture in peanut oil till done, added 2 c. leftover rice and heated. Then added ground vegetables to heat just a bit. I served this over shredded lettuce and made the dipping sauce into a salad dressing by adding peanut oil, a tad more sugar and substituted rice vinegar for the lemon juice. Lemon juice just didn't sound right for Asian food! It made a nice Asian salad. Great recipe.

Pork Chops with Cherry Sauce

This was pretty good, but not as good as I thought it would be. The only change I made was to use less broth. If I tried it again, I couldn't taste the orange and would alter this next time. It would be good on chicken too.

Cornmeal Cookies III

I used 1 T of lime extract in the cookie as the dough didn't taste like lime at all. I didn't have lime peel, so just used lime juice. Don't do it! My cookies hardly had any lime taste at all. I thought the cookies were too sweet. One T of lime juice to the confectioners sugar amount was way too runny. I don't like to select stars when I didn't follow a recipe exactly, but can't get around it.
