Mashed Turnips with Caraway

Reviewed: Jul. 12, 2007
I do not like to have to choose a rating when I change a recipe, but am forced to do so! Due to the fat content, I made changes and used low fat sour cream and margarine. It tasted pretty good. Caraway is an interesting combo with turnip.

Homemade Shake and Bake Mixture

Reviewed: Jun. 18, 2007
While I liked this recipe, I gave it a 3 as it would have been far too salty had I used all of the salts called for. I used celery seed and omitted the garlic salt.

Greek Pasta Salad I

Reviewed: Jun. 5, 2007
I cut the vinegar to 1/3 cup and since I didn't have mushrooms and I like more pasta in my pasta salad used 5 cups whole grain pasta. I rated the recipe based on the 1/2 cup of vinegar which would have been too much, in my opinion.

This was an interesting combination. I used bone in skinless chicken.

Overnight Caramel Pecan Rolls

Reviewed: Dec. 18, 2006
Very good! Everyone at the breakfast raved about these. I doubled the caramel pecan topping as many suggested, but it was too much sweet goo for me. I will double the pecans, but not the rest of the topping next time.

Sugar Free Granola

Reviewed: Oct. 30, 2006
This is a tasty version of a less sweet granola. Correct, this recipe doesn't have added sugar, therefore it could be labeled sugar free. Correct, this recipe has plenty of natural sugar. However it also has plenty of starch, both of which cause a blood sugar rise in a diabetic. Diabetics, eat this granola with caution. The recipe yielded 13 cups when I made it, as written. I put it through a nutrient analysis and per 1/2 cup - 237 calories, 11 gms fat, 31 gms carbohydrate, 5 gms fiber. Hope this helps, Karen, Registered Dietitian

Chicken Soup with Drop-In Noodles

Reviewed: Sep. 4, 2006
I may have given this soup 3 stars if it wasn't for the "noodles." They didn't work at all. The mixture quickly turned to a dough and had to be rolled and cut to be salvaged. My husband said they added a different texture to the soup, but nothing more. The dogs ate the rest of the noodles and I will add some boxed pasta to the soup. If salt if the taste you want, then this is the recipe for you. I omitted the bouillon and used reduced salt canned broth for all the liquid. Even so there wasn't much flavor other than salt.

Best Whole Wheat Chocolate Chippers

Reviewed: Sep. 2, 2006
Pretty good whole wheat cookie, but too sweet for my taste. I'm going to try the recipe with less sugar and butter.

Oatmeal Apple Muffins

Reviewed: Aug. 26, 2006
Pretty good muffin for a healthier muffin. Used applesauce rather than apple, milk (less of due to applesauce), and regular oats (soaked in liquid ingredients while measuring dry ingredients and spraying pans).

Amish Slaw

Nice change from a mayo dressing, though a bit too sweet for my taste. Second time I reduced sugar to 3/4 cup and added apple for more interest.

Summer Squash Pizza Crust

Reviewed: Jul. 20, 2006
While the flavor was okay, it was way too salty. I only put a few shakes of salt on the squash. I can't imagine using the full measure of pepper. Just used a few dashes and it was plenty for me. Recipe was a lot of trouble for the outcome.

Yellow Squash Patties

Reviewed: Jul. 13, 2006
I didn't use all the salt, so maybe that is where the flavor comes from. They were flavorless and the texture was unappetizing. A drawback to this recipe is not having a better measurement for the squash.

Cream Cheese Basil Summer Squash

Reviewed: Jul. 13, 2006
I used less cream cheese than the recipe calls for and that was the dominant flavor.

Sour Cream Biscuits

Pretty good substitute for a biscuit even when 1/2 whole wheat flour used. Baking in a toaster oven at 450 degrees results in burned tops!

Blue Moon Salad

Reviewed: Jun. 24, 2006
I tried the salad without the cheese as previous rater suggested. Way too much bite from the vinegar! Feta helped balance the bite. I added honey to the rest of the salad (without cheese)and liked it best that way. I really like the cabbage/radish/apple combo and will work on a variation of the vinegarette dressing. Nice change from coleslaw.

Stuffed Eggplant with Shrimp and Basil

Reviewed: Jun. 24, 2006
I used the same ingredients, but changed quantities, so can't rate the recipe as written. I used 3 TBSP of olive oil and that was plenty! Halved the parmesan and wine, put in 1/2 pound shrimp and used 2 slices whole wheat bread rather than dry bread crumbs. Since I can't enter this without stars, I rate MY version as 5 stars.
