Jicama, Carrot, and Green Apple Slaw

Reviewed: Jan. 15, 2013
I'm always looking for more slaw recipes, but this one isn't one I will make again. It was pretty much flavorless as the recipe is written. I added more oil, lime and cilantro to the 8 cups of veg/fruit mixture but that still didn't get it to great. I added some sugar, and more salt than I usually use to get more taste, but it needs something else to make it more flavorful and interesting...

Oregano-Lemon Chicken

Reviewed: Feb. 23, 2012
I was looking forward to this LEMON chicken after reading the reviews. However it didn't taste much like lemon! It might is you marinade the chicken overnight and thicken the liquid so it sticks to the chicken.

Tuna Curry in a Hurry

Reviewed: Dec. 13, 2011
This was pretty bland and lacking in substance. I added a lot more curry powder and sauteed mushrooms to improve it. This is simply a quick sauce for a tuna noodle casserole, with curry added.

Fruity Curried Lentil Salad

Reviewed: Oct. 6, 2011
I don't like to rate a recipe that I changed, but there doesn't seem to be any way around it. I cooked 1/2 cup of lentils in 1c. p/a juice/water and spices as called for. Then added 2 c. cooked quinoa, 1/2 c sweetened coconut, 1/3 chopped pecans and about 1 c crushed pineapple. I liked the sweet with the curry. Tomorrow I will try it cold with leftover chicken, and the onion I forgot to add.

Barbeque Chicken

Reviewed: Aug. 25, 2011
I followed the recipe as written and ended up with a small amount of sauce on the chicken which was sitting in a 1/2 inch of liquid. The chicken was fully cooked after 20 minutes at 350 degrees. To rescue the chicken I reduced the liquid in a sauce pan and added corn starch to thicken. Poured the sauce over the chicken and broiled it for 5 minutes. The chicken was overcooked...

Tofu Creamed Spinach

Reviewed: Jun. 15, 2008
I thought this was really bland and just not delicious. I added olive oil, walnuts and a pinch of nutmeg to try to give it more flavor, but even that didn't save it.

Apple Bars

Reviewed: Jun. 15, 2008
This was good, but a little bland and sweet. I used 3/4 nuts and 1 1/2 c. apples. Next time I will add some nutmeg and use 3/4 c. sugar using brown sugar for more flavor.

Apple Peanut Spinach Salad

Reviewed: Jun. 6, 2008
I really liked this recipe, but my husband thought it was okay. The dressing is excellent and will be made often. Great flavor combinations.

Spinach Enchiladas

Reviewed: May 29, 2008
I made a lower fat version using low fat cheeses and 1/2 the Jack called for and added salsa and green chilis rather than enchilada sauce and it was still boring.

A Different Carrot Raisin Salad

Reviewed: Apr. 21, 2008
I liked it better than straight mayo based carrot salad, but it was still bland.

Asian Roll Lettuce Wrap

Reviewed: Feb. 23, 2008
I wasn't in a mood to be fussy and make meatballs, so I fried ground chicken mixture in peanut oil till done, added 2 c. leftover rice and heated. Then added ground vegetables to heat just a bit. I served this over shredded lettuce and made the dipping sauce into a salad dressing by adding peanut oil, a tad more sugar and substituted rice vinegar for the lemon juice. Lemon juice just didn't sound right for Asian food! It made a nice Asian salad. Great recipe.

Pork Chops with Cherry Sauce

Reviewed: Feb. 22, 2008
This was pretty good, but not as good as I thought it would be. The only change I made was to use less broth. If I tried it again, I couldn't taste the orange and would alter this next time. It would be good on chicken too.

Cornmeal Cookies III

Reviewed: Dec. 1, 2007
I used 1 T of lime extract in the cookie as the dough didn't taste like lime at all. I didn't have lime peel, so just used lime juice. Don't do it! My cookies hardly had any lime taste at all. I thought the cookies were too sweet. One T of lime juice to the confectioners sugar amount was way too runny. I don't like to select stars when I didn't follow a recipe exactly, but can't get around it.

Pennsylvania Dutch Pickled Beets and Eggs

Reviewed: Jul. 23, 2007
I used beets only and everyone who ate them liked them. I will use a different vinegar, or mix, next time to see if I can get a little less of a jolt from the vinegar.

Broccoli Beef I

Reviewed: Jul. 19, 2007
Too sweet and too much sauce. Too little broccoli. Flour makes the sauce look cloudy, try cornstarch instead, but not as much!

Five Spice Muffins

Reviewed: Jul. 18, 2007
The spice flavor is great, but they are way too sweet. If you like store bought muffins, which should be called cupcakes, then use all the sugar. I'm going to add the spices to a more healthy whole grain muffin recipe.

Chicken Soup I

Reviewed: Jul. 18, 2007
When I tated the soup after following the recipe it was only 3 stars. After a bit of enhancement it was 5 star. I added a couple of teaspoons of chicken base and added soup pasta. The broth was wonderful! I will use this recipe from now on and add soup base, pasta and chopped vegetables for more flavor and interest.
