Sam's Famous Carrot Cake

This was great! I followed the recipe exactly. I did take it out of the oven after 45 minutes, it was getting brown and crisp around the edges. I would try to bake it a lower temp next time.

Spinach Stuffed Chicken Breast

I was really excited to try this recipe after reading all the great reviews. Unfortunately, I was disappointed. The spinach stuffing was runny and so so. The chicken breasts were dry even after marinating them in buttermilk. I would not try this recipe again.

Chicken with Mushrooms, Prosciutto, and Cream Sauce

Maybe I missed something here, but I thought this was "OK". My mistake may have been that I used thighs that were not boneless. The thighs took 1 hr and 20 minutes to cook. The cream sauce was marginal.
