Pasta e Olio

As it was written not a fan, too oily and greasy and the garlic just wasn't right. I saw the potential in it though so the second time around I essentially simplified it, I added just a splash of olive oil to the noodles after cooking, melted the butter in a pan with the red pepper, garlic powder and a little dried parsley. Shut off the burner, tossed the noodles in the pan and mixed in a good amount of fresh parsley, salt and pepper, and a touch of lemon juice to brighten it up a bit. It was perfect, served with lemony steamed fish recipe.

Cod with Lemon, Garlic, and Chives

This was my first fish recipe ever, I made this for my in-laws and husband. In all honesty I didn't like but it was through no fault of the recipe I just learned I was not a cod fan. The ones I made this for, who are big cod fans LOVED it, it was a huge hit and I've already been asked to make it again next time it's my turn to cook. The only change I made was to add a splash of Pinot Grigio to each packet. Obviously I'll be making it again.

Lemony Steamed Fish

Absolutely wonderful love the dill! The only change I made was adding a splash of Pinot Gigio to the packet and when it finished added the liquid from each packet to a pot with more wine and reduced it to a sauce to top the fish. This was my first time cooking halibut and second cooking fish at home, this will certainly be on the menu again! Served with the pasta e olio recipe and asparagus.

The Irish Potatoes

It was SO bland. I added extra onion and seasoned every layer with parsley, salt, and pepper. I also added crushed red pepper and chives just because I enjoy big flavor and it seemed a bit light. Still after the first bite I realized this just didn't work, it just wanted something, It felt very unfinished my husband and kids felt the same way. Since I had tons leftover the next day I decided to try a couple options to save it since I hate waste. I added cheese, garlic powder, and more red pepper and baked it until cheese melted, it helped a bit. I also flattened them into patties and added garlic salt and fried them in butter, that was the best save and actually very good but this recipe is still not worth making again in my house.
