Soft Oatmeal Cookies

I made these this morning for my daughters field day at school. The flavor is great. I thought they were a bit on the dry side, but overall a good cookie. I may add a little applesause next time I make them to bump up the moisture. I will also try to reduce the amount of sugar.

Blueberry Coffee Cake II

This is very good using fresh or frozen blueberries. I suggest that if you don't want to have the crumb topping add a little extra sugar to the batter. Whole family really likes this!

Cake Mixes from Scratch and Variations

I've been using this recipes for the past few months and I'm pretty happy with it. I need to stress that it is a very basic recipe. I made it as is the first time and it was really dry. I now make sure that I add a package of pudding to every batter and it really makes a big difference. I also don't use shortening, just a combo of oil and applesause(more applesauce) to keep it lower in fat.

Banana Bread IV

This was a nice dense bread. I did not use shortening. Instead I used 1/2 cup of applesauce and 1/2 cup of oil. I also used 1 cup of white and 1 cup of brown sugar. Very good!

Fantastic Black Bean Chili

This was so good! I used Morningstar Farms Griller's Crumbles instead of the ground turkey. This was wonderful with a big, thick piece of cornbread!

Wheat Germ Whole-Wheat Buttermilk Pancakes

These were very good. However, I had to add to them to make them that way, so I am only giving them 4 stars. I added cinnamon, sugar and orange zest. I honestly don't think they had any taste until I added these extras. I will definately make again with my additions.

No Bake Cookies V

First time I made no bake cookies. The taste is really good, but to me the oats are way to dry and chewy and take away from cookie itself. Next time I will experiment with the oats to make it better. Maybe use rice krispies instead??

Banana Fritters

Before I made these I read all the reviews. So, I used 3 bananas and added 3 tablespoons of brown sugar AND 3 tablespoons of white sugar. I also used extra cinnamon and added about a teaspoon of vanilla extract. I dropped them into the hot oil by the tablespoon and they turned out really good! I am only giving this 4 stars because if I followed the recipe exactly they would have been lacking flavor.

Wonderful Banana Cake

This was fantastic. I omitted the oil in the cake recipe and used applesauce instead. Baked in a preheated oven for about 40 minutes. This is so moist and delicious. Rave reviews from my dinner guests.

Cinnamon Raisin Bread I

The flavor was great, but my bread came out very dry. I am going to chalk it up to human error, maybe used to much flour or cooked a little too long. Next time, I will put a shallow pan of water in the oven while it is cooking. This made a very good toasting bread.

Sweet-Potato Muffins

These were really good and lasted for several days. I had sweet potatoes left over from Christmas, so I made a double batch less the nuts. My young kids really liked them too. I will be keeping this recipe around!

Creamy Corn Soup

This was okay. I consider it more of a base recipe to work from. It needs more seasoning and stuff added to it. I added diced potatoes, carrots and tarragon. The additions helped, but it still needs something else. My 2 recommendations when making this soup are to make sure the onions are finely diced and make a sure that you have a good roux, otherwise the soup is really thin.

Peppermint Brittle

This was my base, but I modified it slightly. I love the Williams & Sonoma peppermint bark, so I did half semi-sweet choc chips and half white choc chips. Yummy! I recommend that you break the pieces up, so they are small. Everyone that ate it said they the little bits and the big pieces were the last to go, who would have thought that!

Smushed Apples and Sweet Potatoes

I doubled the recipe and it turned out wonderful. I served this with a ham for Christmas and everyone raved about it. The pork and the sweet potatoes complimented each other nicely. This is a keeper.

Sweet Potato Pie I

This was fantastic. I use to have a great sweet potato pie recipe, but lost it when I moved and I am glad that I did!!! This is my new favorite recipe. I made this with this site's Graham Cracker Crust I recipe and it was a perfect compliment. I won't be losing this recipe.
