Taco Casserole

As written, I would give it 2 stars...very pasty and bland for our taste. The next time I traded the salsa for the tomato soup, and substituted crushed corn chips and Doritos' for the macaroni and added 1 cup of frozen corn along with extra seasonings, (cumin/chili powder/garlic) to the hamburger and layered it all. Added a side salad for the greens/veggies and it was a hit all around. More snap, not as sweet or pasty this way.

Zuppa Toscana

I do add more potatoes and brown the ground chicken sausage first. Rather than the heavy whipping cream the chef told me to add a quart of half and half instead. It's a wonderful filling soup, and so easy!!I make exactly the way the chef said and never tire of it!

Easy Chicken Taquitos

Was not pleased with this recipe, very bland. Perhaps using leftover shredded chicken, even from the deli would enhance the flavor. I added my own spices with chili pwder, cumin, garlic etc. and added green chilies. If you spray them with a bit of Pam they crisp up nicely and kept them from just being dried. Still easy but this way flavorful.

Mexican Shepherd's Pie

Have made this for years, but we've always called it Tamale pie...taste the same and the only thing different was, we added diced green chilies and cumin, and either fresh of frozen corn. Serve it with extra cheese on top and it's a big hit at home, potlucks or guests. We double the recipe of course for 9. =)
