Colleen's Slow Cooker Jambalaya

So easy and good. I omitted the celery because I didn't have any on hand and it was not missed. Added crawfish tails to the Jambalaya. Cooked for 4.5 hours on high. Received several compliments.

Apple Crisp II

Always a hit in my house. You should definitely double the topping. Serve warm with vanilla ice cream. Yum yum.

Zucchini Brownies

I thought this recipe was good. I have to admit, I was a little skeptical when mixing the batter. The batter will be very dry and crumbly. The more you work the zucchini, the more moisture was produce. I was quite surprised by the finished product. The brownies were very moist. I made the icing and thought it was great. My fiance couldn't taste the zucchini and was amazed when I told him that it was the secret ingredient. I don't know what the other cooks did, but the brownies didn't taste salty to me. The key is the really work the mixture to prevent dry clumps in the mixture. I allowed the zucchini to become room temp. after I shredded them. As the zucchini sits, you can see the water coming off of it. Maybe that will help with the dry or salty results. Will definitely make again.

Six Can Chicken Tortilla Soup

This is a great starter recipe. I was craving tortilla soup but did not feel like driving to a resturant to get it. Instead of canned chicken [which has way too many perservatives], I purchase a whole baked chicked from the store and shredded it for the soup. I also added some other spices. Very easy recipe.

Crab Stuffed Flounder

Great Recipe. I doubled the topping, and used seasoned breadcrumbs instead of saltines. I would also recommend seasoning the fish before adding the topping. Don't get so carried away with measurements with the topping. I also added Old Bay seasoning to the fish and topping. My family loved it.
