Special Irish Beef Stew

Reviewed: Mar. 26, 2007
Good stew! Scaled for 12 and made in the crockpot. I also used less carrots (about half) and two bottles of Guiness. Thought it tasted much better the next day. Still think I prefer the red wine stew better, but loved the mushrooms-never put those in beef stew before, yum!

Saucy Apple Pork Chops

Reviewed: Aug. 30, 2007
Very tasty! I followed the recipe exactly and came out very good. The garlic and ginger give it a little kick. My kids thought the sauce looked a little funny (applesauce texture), but it did help keep the chops moist ( I spread some on top of chops also). I made baked spiced apples and spooned over the finished chops-made presentation nicer. Great fall meal! Thanks!

Amy's Cilantro Cream Sauce

Reviewed: Sep. 12, 2007
I tripled the recipe for a catered dinner for 35-served with cilantro-lime shrimp (dif site). Guests loved it with the shrimp. Really unique taste--heat from the salsa & garlic, cool from the cream cheese & cilantro. Different than most traditional cream cheese dips served.

Next-Best-Thing-To-Robert-Redford Pie

Reviewed: Jan. 8, 2008
This is my mom's favorite dessert, which my ex-sister in law USED to make! I didn't have a recipe, but this one was perfect! Mom even said it was better than the ex-sister in law's! I thought crust would be harder-kind of crumbly to the touch. I was nervous that the first layer would mess it up, but it ended up working fine. An off-set spatula was very helpful in spreading the different layers! Might try the lemon version (mom said she'd had it before) for Mothers Day. Thanks for the recipe!

Garlic-Lemon Double Stuffed Chicken

Reviewed: Feb. 22, 2008
This recipe was good enough for me to serve to 80 people for a Sunday School class dinner! The modifications I made to feed the crowd were: pounded chicken day before, added garlic and italian seasonings to cream cheese mixture, used shredded cheddar, added egg to milk. I rolled chicken up, didn't even use toothpicks-only minor leakage! I assembled chicken rolls early in day, then just drizzled with sauce and baked right before serving. Did have to re-pan after cooking, quite a bit of grease with butter sauce and cheese stuffing, so for presentation I put into clean pan for buffet. Served with roasted asparagus and red potatoes with rosemary. Guests absolutely loved it!!

Boilermaker Tailgate Chili

Reviewed: Feb. 25, 2008
It was my Boilermaker duty to try this chili! Very good-everyone enjoyed. It reminded me of Wendy's with the celery and peppers. I didn't notice the bacon too much and would probably leave that out next time. Even though it is a sin in Indiana not to put spaghetti noodles in your chili, I much prefer this recipe to what I used to make!

Garlic Butter

Reviewed: Feb. 25, 2008
I make this butter in bulk for parties where I'm serving a vegetable medley. It gives the veggies a little something extra rather than just serving steamed. I roll in plastic wrap, chill, then slice rounds into steamed veggies to season. Extra's can go on garlic bread... or whatever!! Great basic!

World's Best Lasagna

Reviewed: Mar. 5, 2008
Great recipe. Followed recipe exactly...except-no salt, fennel seeds or parsley (kids don't do green things in food). Used turkey italian sausage, fresh mozzarella and parmesan and low-fat cottage cheese instead of ricotta (what I had). Thought it could've used more garlic, but DH said it was perfect as is. Did 3 layers of noodles (9 plenty) and baked as directed. Think the fresh mozzarella made the dish-definetly my new lasagna recipe.

Sweet and Sour Drumettes

Reviewed: Mar. 11, 2008
These were pretty easy and cheap. I thought the sauce would be thicker-didn't want to take the time to thicken it up myself. Served with sticky white rice (sauce was great on rice). Like that recipe used simple ingredients everyone has in their pantry! Cook time was right on.

J.P.'s Big Daddy Biscuits

Reviewed: Mar. 20, 2008
Never made biscuits before because I love the frozen ones from the groc store and didn't think it could be easier, I was wrong!! I used my food processor-quick and a lot cheaper than the frozen ones! My daughter requested bisq & gravy for her 6 yr b-day dinner (that's my girl!), so I gave these a shot-very impressed! I rolled thinner to make more biscuits, but next time will follow directions to make 6 large biscuits. I also used real butter instead of oil. The leftovers were still delicious this morning-soft and moist! Thanks!
