Vegan Red Lentil Soup

I made this soup yesterday. I tried to follow this recipe as closely as possible in the ingredients. I did have to substitute asafetida for garlic (due to my garlic allergy) and ground ginger for whole (what I had). I ommitted the cayenne (my husband doesn't tolerate too spicy hot) and regular pepper (I don't use that in my cooking). I steamed the squash first and mashed it before adding the lentils. I had to use half the amount of coconut milk because that is what I had. As others mentioned, I had to add more water till the lentils were done. Anyways, my modifications were slight. I was so proud of myself for making something that finally tasted like true ethnic Indian-like cuisine. My husband loved it and told me to make it again. I would like to try making it again omitting the "pinch of" this and that just to save on pulling out ingredients. But I love how subtle all the flavors are and how well they go together to make a delicate, slightly sweet whole. We served it with buttered quinoa. Thanks so much for sharing this one. Ethiopian Cabbage Dish

As I'm always looking to save time and cut corners, I took another reviewer's recommendation to use the bag of coleslaw already cut up. I also doubled the spices as recommended. And I added a can of garbanzo beans so that it could be an all in one meal. I did much less olive oil and left out the black pepper. It's a somewhat delicate flavor, but tasty none-the-less. If my husband likes it, I'll make it again.

Chinese Style Sesame Sauce

I am a vegetarian. I used a beef-style bouillon cube with 1 c. water instead of the 1 c. chicken broth. I used lemon juice instead of vinegar. I used Bragg Amino Acids instead of soy sauce. I didn't have any chili paste. I used garlic powder instead of a clove. I liked it a lot. My husband just thought it was okay. I served the sauce over broccoli and tofu fried rice. Next time, I'd like to try less sugar as it felt overwhelming pouring 1 c. of sugar (florida cane juice crystals) into the sauce pan.

Jimmy's Mexican Pizza

I am vegan vegetarian. I didn't use (veggie) meat, just the refried beans with a little taco seasoning and the sauteed onions. Otherwise, I did the recipe using Daiya monzarella and cheddar imitation cheese. It was AWESOME! I used to like the taco bell mexican pizza, but their crust was a little sweet?? Anyways, if you toast the tortillas first by spraying a little oil and putting them in the oven, you can get it nice and crispy. This is definitely a keeper. Thank you!
