Two Ingredient Pumpkin Cake

I didn't have any pumpkin but I did have two cans of carrots so I thought, "Why not?" I first drained the carrots then dumped them in the bowl and beat the heck out of them with my electric mixer. I then decided since I was already experimenting I added some chopped walnuts. I was worried I didn't have enough moisture since I had NO idea if the amount of carrots I now had was equal to a can of pumpking and the walnuts would soak some up too, I added 3 medium eggs. I followed someone else's suggestion of baking it in a bundt pan and did the sour cream glaze. It came out great!!! It wasn't as carroty as carrot cake would be but my husband and grown son have been fighting over who gets the biggest pieces. Next time I will try it as it should be. I bet it is just as good. Thanks for the recipe!*** 2nd, 3rd... times around... I used an electric mixer each time I made this and had NO problems mixing. I followed the recipe exactly the 2nd time and the texture was not as good. The 3rd and subsequent times I added an egg or two and it was GREAT!!! I have used a bundt pan each time and it turns out lovely and rises just fine.

Never Enough Green Bean Casserole

The original recipe called for a jar of Kraft Bacon cheese spread. It comes in a small, 5 oz. glass jar (with a metal pry-off lid). It also comes in other flavors. Old English is the one I use when I can't find the Bacon (as a last resort Velveeta-type)and add 1 to 2 T. finely minced cooked bacon. Obviously, the bigger the chop, the less bacon there will be in 1 T. This recipe doubles or triples nicely. I have also doubled the amount of green beans without changing the other ingredients and this works well too in a pinch. Hope this helps ~Deb

Dressing for Potato Salad

The dressing was yummy. It reminded me of something my mom used to throw together when we were out of salad dressing. The potato sald tasted fine right after mixing it all together but the next day was another story. My usual potato salad tastes better the longer it sits. If anything, this got worse. The leftovers the next day almost tasted like there was NO dressing on them at all.

Stuffed Acorn Squash II

Spicy Oatmeal Raisin Cookies

These were the easiest "homemade" cookies I've ever made and were a real hit. I tried another scratch recipe from here and they were too sweet. These are just right with just the right amount of spice. My husband likes nuts in his oatmeal cookies so I added some chopped walnuts and increased the amount of raisins a little and he loved them. I use a cookie scoop to put them on the baking pan and the first sheet took a long time to bake and didn't spread much so the second batch I flattened with a spatula and they were just right and took less time to bake. I will use this again and again! Thanks for the recipe.

Black Forest Dump Cake I

This was so dry, I thought maybe it should have been baked covered or maybe there was a cup of water omitted from the recipe. It didn't stop my guys from eathing it though! ** Afterthought: I made sure I used a 9X13 pan. After reading the other reviews and some seeming like they turned out right, I am wondering if a 9X11 pan was used by those who had good results????
