Coconut Chocolate Chip Cookies

I was snowed in and only had vanilla extract. Otherwise, I followed the recipe exactly. The cookies were good, but I didn't taste any coconut. I guess the extract makes the coconuttiness?

Classic Bran Muffins

These were the best bran muffins I've ever made! I was a little short on the brown sugar so I threw in some honey. I also used craisins--yum! These muffins were so moist and delicious!

Banana Sour Cream Bread

Wow, this bread is great! I live alone (and only had 2 bananas), so I made 1/4 the recipe to end up with 1 loaf. It turned out so much more moist than other banana breads I have made and was delicious! My plan was to give half the loaf to a friend, but after the first piece I decided there was no way I was sharing! =)

Refried Beans Without the Refry

These were wonderful and so easy to make! I'm used to soaking my beans before cooking and wasn't clear based on this recipe if I was supposed to do so. I soaked the beans overnight and they were done in the crockpot in about 3 hours. A big hit at my recent Southwestern-themed party!

Margaritas

Because this recipe was so simple, I was thinking these margaritas would probably be good, but not great. They were fantastic! Thanks to KDA949 for the great advice to measure the tequila and triple sec using the limeade container. These could not have been any easier to make and everyone at my party loved them!

No Bake Chocolate Oat Bars

I thought these bars were awesome! I love no-bake recipes in the summertime, and these were so easy to make. I think that the reviewers who complained about them not staying together didn't refridgerate them long enough because I had absolutely no trouble.

Roasted Garlic Teriyaki Fried Rice with Chicken

This was good, and as I am a vegetarian I used tempeh that I had marinated in teriyaki sauce instead of the chicken with good results. I agree that a little extra teriyaki could be added to the rice to give more flavor.

Fresh Cherry Crisp

This was delicious and what a great way to use the fresh cherries that are in season! It is true that this makes a lot of topping, but I like it like that so it didn't bother me. You could half the topping and add more cherries if you like it heavier on the cherry side.

Quinoa and Black Beans

Yum! Much more flavorful than I expected. This is great by itself but would also be great as the base for a burrito, which is how I plan to use the leftovers. I think I agree with other reviewers that 1 can of beans is plenty (unless you really just like a lot of beans!).

White Chocolate Raspberry Cheesecake

This recipe got rave reviews from my family on Christmas! One tip, which made this even easier to make: I used seedless raspberry jam instead of cooking the raspberries on the stove. I just microwaved 6 tablespoons of jam for 30 seconds before adding to the cheesecake. It was so much easier and tasted fantastic! I also microwaved the white chocolate with half-and-half with excellent results. I will definitely make this again! Everyone was so impressed!

Slow Cooker Mashed Potatoes

These potatoes were really good, but they seemed to take more effort than they were worth. I like to use my slow cooker for convenience (just toss in some ingredients and my meal is done a few hours later), but this recipe requires you to actually make the mashed potatoes before you ever put them into the slow cooker. I might as well have mixed all of this up on the stove, which is probably what I'll do next time.

Baked Ziti I

This was excellent! I'm a vegetarian so I didn't use the meat but it was still very cheesy and satisfying (maybe next time I will add veggies). This is very rich and a little goes a long way, so I will probably cut the recipe in half next time if I'm just cooking for 1 or 2 people.

Garden Pasta Salad

Very easy and delicious! I usually make pasta salad from a box, but this was SO much better. I took it to a potluck and got many compliments. I followed others' advice and used only 1 bottle of salad dressing and it was plenty. I also used red onion, which had great flavor. The only time-consuming part of making this was chopping up all the veggies, but it was definitely worth it to have something so fresh and delicious!!
