To Die For Blueberry Muffins

These are the best muffins I've ever made. If anyone is interested in what I did to make it vegan here it is: 3/4 Vanilla Almond milk with one teaspoon apple cider vinegar to make it "buttermilk" (let sit 10-15 minutes before mixing in) I used Earth Balance buttery sticks Subbed the egg for Ener-G Egg Replacer (mix well and let sit for 5 minutes) For the topping I used brown sugar which was delicious. I also used frozen blueberries and frozen red raspberries together and that was the best decision I could have made! I filled the muffin cups to the very top and my topping did not sink at all. I did however follow these tips to ensure they came out delicious: Do not over mix Grease the top of the muffin pan Follow instructions completely
