Chocolate Eclair Cake

This was really good and really easy. I used only 3 cups of milk, per the comments of others, but next time I'll use the full 4 cups (my pan was plenty deep). I also used 160z light cool whip. I took this to an Army Christmas party and apparently it was a hit because the pan got cleaned out. I will definitely make this again, probably sooner rather than later.

Slow Cooker Chicken Taco Soup

This dish was very good! I made some substitutions based on what I had on hand - 1 can of chick peas instead of chili beans, 1 can of stewed tomatoes instead of tomato sauce, 1 cup chicken broth instead of beer, 1 can of Rotel, 2 packages of taco seasoning and like 5-6 chicken breasts. Mine turned out really meaty and was perfectly seasoned. I cooked on low for 6 hours because I was way from home. After shredding the chicken I cooked for 1 hour on low. We didn't eat it until the next day and MMMMM! I put half away in the freezer for another time and I can't wait.

Barbie's Tuna Salad

This is by far the most flavorful tuna salad I have ever made. I only had a 5oz can of tuna so I tried to scale back the rest of the ingredients. I used only 2 TBSP of mayo to save a few calories, omitted the dill weed because I didn't have any, and I added a hard boiled egg. This was delicious and I will definitely make again. I may even try this with chicken.

Janet's Rich Banana Bread

I just took this out of the oven and have already had several "samples". This was my first attempt at banana nut bread and I am very impressed and pleased. A few changes I made: used 1/2 cup brown sugar and 1/2 cup white sugar, 2 tsp vanilla, and 1/2 cup pecans in lieu of the walnuts. I also mashed up the bananas and baked for 45 minutes. Per other reviews I had intended to add cinnamon but forgot so I just sprinkled some on top before I put it in the oven. This is awesome and I'm sure the whole family will enjoy it.

Blueberry and Raspberry Pancake Topping

This was so easy to make and delicious! I used 2.5 cups of fresh, hand-picked blueberries. I added 2 tsp of white flour to help thicken, but honestly I didn't even wait to see if it would be needed. This turned out perfect and I look forward to making again. I used this to top "Whole Wheat Blueberry Pancakes" also from this website.

Whole Wheat Blueberry Pancakes

I decided to make these for Father's Day breakfast after taking my kids to a blueberry picking farm. Based on other reviews, I doubled the recipe and made the following modifications: 2 cups whole wheat flour, 1/2 cup white flour, 2.5 cups 2% milk, and 2 TBSP honey. Doubling the recipe yielded 15 pancakes, each 1/4 cup of batter. I served these with "Blueberry & Raspberry Pancake Topping" (from this website, using only blueberries) and smoked turkey sausage. My hubby and the small kids loved them, but my teenager, not so much. I felt great knowing I had made a delicious healthy meal for my family. I rated these a 4 because of the changes that were strongly suggested by others. Perhaps I'll make a single batch next time exactly as written. I will definitely make these again.

Chicken Bog

My whole family really enjoyed this dish. The changes I made: used approx 4lbs drumsticks, 2 cups rice and omitted sausage. I only used 1 tbsp Italian seasoning and think that 2 tbsp would have been complete overkill. I also omitted the chicken bouillon as the tbsp of salt provided plenty of flavor. I used all of the water left from boiling the chicken and it was just about perfect for the 2 cups of rice. Will def make again.

Ann's Dirty Rice

This was a very easy, tasty last minute meal to throw together. I didn't use the peppers as I didn't have any on hand. I added a can of Rotel at the advice of others, which added a nice kick. The seasoning was very good. I added a little ketchup to my 2 year old's plate and he gobbled it up. Will def make again. Thanks!

Harvest Salad

This salad looked and tasted very good. It was quite flavorful, but only in moderation. I enjoyed the first bowl so much I went back for seconds. Half way through the second bowl it became a bit much. Will def make again, and limit myself to one bowl. Thanks!

Luscious Slush Punch

I made this at my sons 2nd bday party and it turned out great. I used less sugar as others suggested but otherwise followed exactly. As for the "slush" part, I took the frozen contents out of the freezer about 3 hours before the party. The first batch wasn't slushy at all, as it took a while for the pouch to melt with the soda. The second batch was perfectly slushy by the time I took it from the fridge and put it into the punch bowl. Next time I'll take the juice pouches out of the freezer 4-5 hours before I'm ready to mix and serve. Nonetheless, great punch.

World's Best Lasagna

The only changes I made were to cut the salt and sugar in half. I usually don't put sugar in my pasta sauce, but I wanted to follow as close as possible. I simmered the meat sauce in the crock pot for a couple of hours the night before I actually served it. I used the no-boil noodles and they were fine without pre-soaking. The amount of ricotta was perfect, not overwhelming as some lasagna tends to be. The day we ate it I thought it was good, but not sure if it was worth the trouble and expense. Two days later this recipe had earned it's 5 stars. The flavor was incredible! I strongly suggest preparing this a day or two in advance and allowing the cheese flavor to really sink into the meat and noodles. Fortunatley I doubled the meat sauce so I'm going to go ahead and prepare another pan to freeze for later use.

Simple Beef Flavored Gravy

This recipe was fantastic! I usually use packaged gravy but didn't have any on hand. I looked online for something i could make with ingedients I already had at home and of course I ended up coming to allrecipes.com. I didn't have the beef cubes so I used chicken instead. it was phenomenal! Thank you so much!

Crab Rangoon III

I decided to try this because I don't eat crab meat and I have not been able to find a restaurant that has only cream cheese. so of course I eliminated the crab and also the chestnuts and I added some scallions. I baked half the batch and then fried half and of course everything is better when it's marinated in grease! so long story short, I will definately make these again.

Taco Seasoning I

(8/18/07)This was a good alternative to the package if you don't have it. I already had all of the seasonings needed. At first I was going to skimp on the salt and red pepper as other suggested, but I decided to throw it all in and it was perfectly seasoned. UPDATE (9/20/07)- I used this on a pound of ground turkey and it was great! I used rounded scoops and you could on even tell it was turkey. My husband wanted tacos again the following night.

Spinach Roll-Ups

I started making this on Saturday afternoon with the intention of finishing up the next day as suggested. Well I put it in the fridge, and it didn't come out until Tuesday (I was very busy). Nonetheless, I rolled it up in the tortillas, sliced it up, and YUMMM! My whole family enjoyed this recipe. It's pretty rich so you can't eat too much at once. But it is very good in moderation. I will definately make this again.

Spanish Rice II

I did not like this rice at all. I used half chili powder and half cumin as others suggested and it was still too spicy. My husband enjoyed it and said it tastes like real Spanish rice. I guess I'm just a spoiled brat American who prefers the 'San Francisco treat'.

Chuck's Favorite Mac and Cheese

I followed this recipe exactly and it was not all that great. I did not like the texture and the flavor was sort of bland. I did like what the cottage cheese added to the flavor. I may try this again, but adding more seasonings and cheese. I didn't add the topping as I've never had mac n cheese that way. Maybe next time.

Pina Colada Punch

I halved this recipe and it was pretty good. I had to freeze it overnight and then chop it up to get it to a nice slushy consistency, which made it even better. I actually loved the crused pineapple texture.
