I decided to make these for Father's Day breakfast after taking my kids to a blueberry picking farm. Based on other reviews, I doubled the recipe and made the following modifications: 2 cups whole wheat flour, 1/2 cup white flour, 2.5 cups 2% milk, and 2 TBSP honey.
Doubling the recipe yielded 15 pancakes, each 1/4 cup of batter.
I served these with "Blueberry & Raspberry Pancake Topping" (from this website, using only blueberries) and smoked turkey sausage. My hubby and the small kids loved them, but my teenager, not so much. I felt great knowing I had made a delicious healthy meal for my family.
I rated these a 4 because of the changes that were strongly suggested by others. Perhaps I'll make a single batch next time exactly as written. I will definitely make these again.
