This was too salty. I even use low sodium beef broth. It was too thick and a little darker then usual. I found with the bacon and oil it was a little heavy and a little greasy. I will probably look for a different recipe in the future.

Eggplant Parmesan II

I went to use this recipe and ended up not following it at all, and doing it the way my mother does. Flour, egg, italian bread crumbs. Lightly cook in olive oil just to brown. Layer in pan with sauce, provolone and mozzerella cheese and baking.

Terrific Turkey Chili

Potato Potluck Dish

It was good but it seemed to be missing something. It was too mushy for me. Maybe it cooking the potatoes differently would do the trick.

Easy Sugar Cookies

I am not a baker and this was great. It was very easy and the cookies were wonderful. I used splenda sugar instead. I also flatened the cookies a little to add some sprinkles. They turned out wonderful.

Broiled Tilapia Parmesan

This was delicious. I used fresh asiago shredded cheese instead, and used garlic powder instead of onion. It was very good. My husband who never eats fish loved it.

Cottage Meatloaf

This was a great recipe. I did make a few minor changes to it. I used diced tomatoes instead of the juice. I added some worchester, lemon juice and garlic powder. I also cooked it in a water bath. It was very good though. My husband loved it.

Easy Herb Roasted Turkey

Using the olive oil is not the best thing to do I believe. It falls off the turkey into the bottom of the pan and tends to burn. ALso I found that the temp given in the recipe was too low. I had to turn my turkey up to 375.
