Skillet Zucchini

I was so skeptical---breadcrumbs, bacon and soy sauce? And then cheddar cheese? Don't let the strange ingredients scare you, this is AWESOME! We will make this many times! The only thing I will do differently next time is to decrease the butter. It was divine, but I'd like to make it healthier. Thanks for the terrific recipe!

Feta Chicken

This was great! Had to use garlic/herb feta, but added fresh basil leaves. We rolled it and secured w/ toothpicks and it worked great. Will definitely make this again! Thanks for the recipe.

Cucumber Peanut Salad

This was very unique! The flavor was fantastic. At our family dinner, guests either liked it a lot or not at all. I followed advice of other reviewers and used olive oil. I will make this again, I'm sure.

Zucchini Alfredo

This is zucchini week at our house since we've been given 10 of them! This was really different and so yummy. Everyone loved it, even the 3 year old! I added 1/2 an onion when I sauteed the garlic, b/c it needed to be used and we love onion. Also used about 6 cloves of garlic b/c we are big fans. I ended up needing to cook my zucchini at least 15 minutes to get the liquid out. Also added slightly more milk to get the sauce the consistency I wanted. Fresh basil is a MUST and made it awesome!!! Wish I could give this more than 5 stars!

Baked Zucchini Chips

We enjoyed this for dinner last night. Its a good, healthy way to use up zucchini. My 3 year old enjoyed helping to make and eat them! Next time I will add more seasonings. Thanks for the recipe!

Basic Ham and Bean Soup

This was a great recipe for our Easter leftovers. I soaked the beans overnight, to make sure they were soft and I didn't add the salt, as others reccomended, but did add some chicken broth powder near the end to add flavor. It was excellent!! I will definitely use this recipe again. Thanks!

Baked Pineapple Casserole

This was excellent! I had tried a recipe before w/ pineapple chunks and cheese, and this was much better. I did double the recipe, but still only used 1/2 c butter and 1 c sugar. It was more than sweet enough. Excellent recipe though---thanks!!!

The Best Oatmeal Cookies

These cookies were awesome! I didn't have time to chill the eggs, but they still turned out great. Oh, and I also used mini chocolate chips instead of raisins and nuts. The only thing I will do differently next time is use a bit less baking soda b/c I could taste it in the cookies. Noone else could though! Will definitely make again. Thanks for the recipe.

Vinegar Based BBQ Sauce

This was great--very authentic NC taste. I didn't have time to let it sit for a few hours, so I just blended it and put it in a pan with some cooked pork. Used about half the recipe for 3 cups of pork and it was really strong--just the way we like it! I can imagine it would be better if I allowed the flavors time to blend. As it was though, it was excellent!

Chicken Hurry

This was great and really easy. I thought I had all the ingredients, but it turned out that I didn't have the onion soup mix, so I used ranch dressing mix instead. It was good, but I'd really like to try it with the onion soup mix. I did uncover it and put it under the broiler for a few minutes at the end to make the skin bubbly and crispy! Thanks for a great recipe!

Cheesy Catfish

I'm not a big fan of catfish, but this was good. I took some advice from other reviewers and added some garlic powder and seasoned salt to the flour. Next time I will use less flour, but it was still good. A few minutes under the broiler made it nice and crisp.

Blue Cheese Dip II
