Easy Broccoli Quiche

Overall, the flavor was excellent and very easy to make. Good for weeknight cooking or something quick to whip up for brunch. Yes, it was a bit soggy on the bottom but that can be fixed with experimenting. I made 2 minor changes; I used 1/2 cup of diced onion (instead of 1 whole onion) and I added 1/2 cup of finely diced carrots just to add a little color into the mix. The basic recipe is a keeper!

Blueberry Zucchini Bread

Parmesan Sage Pork Chops

I usually do not succeed in making pork chops; usually comes out dry and tough. This recipe produced moist and juicy pork chops and was so easy to make for a weeknight dinner. Goes nicely with some roast vegetables. Definitely a keeper!

Oven Fried Chicken III

Great weeknight meal. Very tasty. I didn't change the ingredients but I did change the temperature/time after the first time I cooked it. Cook at 425 degrees for 25-30 minutes. This avoids the sogginess I experienced the first time.

Korean BBQ Short Ribs (Gal-Bi)

Filet Mignon with Mushroom-Cabernet Gravy

The sauce for this recipe is fantastic. For the filet mignon, I actually cut it up into bite size pieces so that the sauce can cover more meat. Easier for my kids to eat as well. Served this with a side of mashed potatoes and steamed carrots and it was a hit.

Chicken Enchiladas I

I followed the recipe as is, except that I omitted the water. It was easy to make and very tasty. Great for weeknight cooking. In the future, I will experiment with adding veggies into the filling or trying the salsa, as others have suggested.

Tasty and easy for weeknight cooking. Just add it to some white rice and you've got a meal right there. I followed the recipe this time but in the future, I might switch up the vegetables. My 4-year-old daughter and husband both enjoyed it so it's a keeper!

Apple Cider Sauce and Pork Loin Chops

Easy to make for weeknight cooking. I followed the recipe for everything except that I also sauteed a thinly sliced apple plus 1/2 a sliced onion. Even my little kids ate up the whole thing!

Spinach Tortellini Soup

Excellent soup and easy to make. I've served this to my small kids and they love it. I've used fresh spinach and frozen (both work). I've added a little oregano and nutmeg, giving it a little zing. All in all, makes a great lunch.

Bacon-Wrapped Asparagus

So simple and yet it became a very nice side dish for our barbecue. It was finished before any other dish. We took one stalk, split it in half and wrapped both halves in half a strip of bacon. Perfect!

Crab Canapes

When I first made this recipe, I followed it to the letter. I learned that the filling was quite good but it was overwhelmed by the heavy biscuit taste. I switched it to puff pastry, cut into small squares and placed into a mini-muffin baking pan. Came out MUCH better and was a hit at our barbecue. Will make again!

Campbell's Kitchen Beef Stir-Fry

The appearance of the dish is quite appealing on the table but the taste was pretty mediocre. Needs to be kicked up a bit with some seasonings. Tasted too much like beef broth.

Stuffed Shells IV

Excellent and so healthy! I used fresh blanched spinach, instead of frozen, and I used low-fat ricotta cheese instead of cottage cheese. Still came out quite nicely. It was a little labor-intensive so I wouldn't recommend this for easy weeknight cooking but definitely good for the weekend!
