Baked Whole Cauliflower

Lol.. my kids walked into the kitchen and saw this big thing I had just pulled from the oven and said "Mom, What's THAT???" They love their cauliflower, and boy did they inhale it. After they finished, they all ran up to the stove to see if there were any "seconds"... but it was already gone. I steamed mine in the microwave, and it turned out great. Had a little trouble getting the crumb mixture to stick to the surface, just had to work with it a little. I served it as a side to the "Easy Caramelized Onion Pork Chops" recipe on this site. It made a very nice family meal.

Easy Caramelized Onion Pork Chops

What an easy, delicious, low cost/LOW CARB pork chop dish! I scaled my recipe to 6 for my slightly larger family and it worked out great. I also added a little of both chicken & beef boullion granules to my water (as suggested by others), otherwise following the recipe to the "T." My family is very pleased! As a side, I also prepared the "Baked Whole Cauliflower" recipe from this site..... it was the perfect accompanyment! Thanks!

Salsa Chicken

I found this to be quick, easy, convenient and tasty. Although it seemed to turn out a little too runny for my liking, the juices, nevertheless were quite tasty and were great served over a bed of hot rice. I used On The Border Mild Salsa. My kids said they really liked this dish, so I may make it again in the future simply because it is a fast and very healthy, hot meal to prepare amongst our busy schedules.

Restaurant-Style Potato Salad

I'll be the first to say right off that I've never been a fan of potato salad.....it has to have a certain taste/texture for me to take even a second bite. But after I read all of the ratings/reviews for this recipe, I had to give it a try for our big July 4th family cookout. I was nervous about making it because my husband first of all normally hates the stuff, and second, I've never been what you would call a very good potato salad maker. Not only did my husband devour this potato salad, but so did all the rest of our family and guests, even a 15mo. old! Everyone was helping themselves to seconds, even thirds until the serving dish was empty. I didn't have pimento or fresh white onion on hand, so I used dehydrated minced onions, and omitted the pimento. The flavors and textures mingled together to make the perfect taste. This was so much better than I've had in a restaurant. This was some good stuff :)

Smothered Meatballs

I used this recipe only for the meatballs (not the sauce) because I was looking for a good basic meatball recipe. The results were just what I wanted. The meatballs were perfect, and my spaghetti dinner was a hit. Now, I will make them again so I can try out this mushroom sauce! Thanks:)

Ham Tetrazzini

This was exactly what I was looking for to use up the Easter ham leftovers. I doubled the recipe to make 8 servings, and I used 98% fat free cream of mushroom soup to cut the calories. It had a great creamy cheesy mild taste, and the combination of ham, cheese and cream of mushroom made it plenty salty without having to add salt. I added just a little black pepper and garlic, and it was perfect. This was also a very quick dish to prepare on a school night. Thanks! 5*****Stars!

Best Lemonade Ever

"I'm in heaven...."(singing)! I must say, this is some **GOOD STUFF!!** It tastes so much like Dairy Queen's lemonade. It's chilling in the fridge and I'm just about to treat my children to their first homemade lemonade on this hot, Southern spring day. Fantastic, delicious, 5*****stars!!!

Shrimp Linguine Alfredo

After reading reviews, I decided to remove the shrimp after 1 minute of cooking. I felt this sauce recipe was a good base, but after reading other reviews, I decided to increase the amount of butter and half and half. I also added sherry and cornstarch to the sauce near the end of cooking once I saw for myself that it would not thicken on it's own. I added salt too. I returned the shrimp to the sauce and simmered it a minute or two longer at the end. It turned out really nice, but only after I played with it to get it just right.

Baked Corn

This was really good. It was a breeze to throw together, and was a great side dish to add to our Thanksgiving table. It paired up wonderfully with the turnip greens, and overall, everyone raved over it. Very good, simple dish. I gave it a 5-star rating.

Sesame Beef

OUTSTANDING!!! My DH and kids were in utter heaven eating this meal! I, too, doubled the recipe, & doubled the marinade. Then cooked the meat quickly, removed it to large bowl while I stir fried fresh broccoli, julienned carrots and onion to tender-crisp, then added the beef back to the skillet and simmered it a little longer in the sauce, thickenening it with a small amount of cornstarch. This was a fantasic one-dish meal! THANKS!!!

Fresh Broccoli Salad

I love this sweet/tangy salad. I substituted sunflower seeds for the almonds, and used golden raisins. I'm taking this to our family's Labor Day cookout. It will be a perfect accompanyment to the ribeye's and garlic bread.

Awesome Slow Cooker Pot Roast

My family loves their roast this way! I shake a little worcestershire and pepper on the roast before I add the can(s) of mushroom soup....I also throw in a few cloves of garlic. I've never added water though because it makes the gravy watery. This is a great dish to serve company.

Caramelized Baked Chicken

I found the trick to getting the sauce to caramelize. Lay a piece of foil just on the top of your baking dish during baking. Turn the chicken about every 20 to 30 minutes to coat with sauce. This dish requires 1 hour & 45 minutes to 2 hours baking time to complete the caramelization process.
