Spanish Flan

This is the recipe i've always used... but for what here in Mexico we call Chocoflan or Pastel Imposible (in southern mexico.. Impossible Cake)... all you have to do is prepare a chocolate cake mix and pour it over the flan mixture, then bake it on water bath (350 degrees) for 1:20 hours.... I promise you won't regret it :)

Chocolate Meringue Cookies

I just ate up 10 of these... lol.... I added 1/2 T more of cocoa, didn't add the chocolate chips, and used 1/3 cup of Splenda BFB.. they were just perfect... next time i'll try with regular Splenda, since, apparently, i'll be eating too many of these ^_^

Stephen's Chocolate Chip Cookies

This cookies are the best! I've made them light (with splenda BFB, light margarine, egg whites, you just have to flatten them a bit right when they come out of the oven, otherwise they come out cakey), i've made them with only macadamia nuts and white chocolate, and when i'm running out of ingredients i make them only chocolate chips... this is the only cookie recipe of this kind i've tried and i wouldn't try any other.... here in Mexico baking this kind of cookies is not something very common, so everyone loves when i bake this homemade cookies... I just love them ^_^

Carrot Cake XI

Wow... i've been using this recipe for about a year now and it is awesome, the only changes I make are using 1 cup applesauce and 1/3 cup oil, and i use 2 tablespoons of cinnamon instead of teaspoons :P... just fantastic :D

Cooking Light magazine's Cherry Cheesecake

I made some substitutions in this one... I used what I had home, which was 1/3 less fat cream cheese and only lite sour cream, but i used splenda and egg subtitute to compensate this. :) great!!

Seafood Salad III

This is great! I used abot 1 1/2 c. crabmeat imitation and used less mayo. I added sweet corn instead of the celery and the bell pepper... sooo good.
