No Bake Key Lime Pie

Mushroom Turnovers

My family loves mushrooms and finger foods. This is always a favorite snack. I use store bought puff pastry to save time and I add lots of garlic to my mushrooms and a little bit of rendered beef fat (I get the fat in chunks from the butcher)for extra flavor instead of butter.

Baked Fettucheesy

I made this as a quick addition to a Mediterranean themed dinner of grilled chicken. I added a lot of garlic (family preference) and substituted all cheese for mozzarella only with fresh cracked peppercorns. I baked it COVERED in the oven for the time said on the recipe. I then browned the top of the cheese with my kitchen torch. It is now a much requested dish for dinner!

Weeknight Wonton Soup

I had a little extra time on my hands so I made some wontons with a simple veal/chicken filling and wonton wrappers. I adjusted the spices to what I know my family likes and added some garlic and ginger. Had no complaints!

Gnocchi Bake

I made this with ground beef (no pork is consumed in our home) and I added some mushrooms, garlic and some peas because I wanted "dinner in one dish" It turned out great. Hubby loved it!

Linguine with Clams and Spicy Marinara Sauce

I tried this for my family today and they loved it! I also added sauteed calamari to the clams. Living in a port city, we really love the fresh seafood. Definitely going into my permanent cookbook!

Best City Chicken

I use veal to make this since my family cannot have pork. I tried it once fried and once baked. Family loved both. It is a coin toss to bake or fry whenever I make this.

Chicken and Waffles

I loved this recipe. At first I tried it with frozen waffles and found that they were somewhat soggy at the end. On my second attempt I made savory spiced waffles in my waffle iron and found it was not soggy. To melt the cheese I put the sandwiches in my toaster oven. The family raved!!

Breaded Beef

I liked the aspect of breaded beef. I used a thin cut steak and marinated it in balsamic vinegar for 30 minutes. after doing the egg dip and breading I BAKED it in the oven for a bit of a healthier choice. It was wonderful on a crunchy kaiser roll with some lettuce and tomato.
