Andrea's Pasta Fagioli

Talk about comfort food!!! This fa-jool was AMAZING..My family slurped it up like there was no tomorrow! Made it exactly as specified, just added fresh basil and fresh oregano instead of dried. Absolutely KILLER!!! Served it up with some crusty garlic bread and some pinot gris. Andrea, Tell Grandma GRAZIE! Folks, trust me.....MAKE THIS!!!

Vegan Red Lentil Soup

Very tasty dish. I added 1 teaspoon cumin, and 1 teaspoon garam masala, and added a whole quart of vegetable broth instead of two cups water per the instruction (per other comments saying it got too thick). Turned out great. I also added some soyrizo (vegetarian chorizo). Great stuff!!!! Thanks

Brazilian Black Bean Stew

OUTSTANDING DISH!!! As a vegan, I left out the Ham and chorizo and used meatless chorizo (soy-based) from Whole Foods, and used coconut oil instead of canola. This is a keeper!!!! Was wonderful on a chilly 30 degree night like tonight...served with crusty garlic bread...To die for!!!! Thank you for this outstanding dish. Will be saved in perpetuity in my recipe box!

Marrakesh Vegetable Curry

This recipe was so wonderful I cant wait to make it again. The contrast of textures and flavors were to die for. The only change I made was I added about 1 cup of vegetable broth to the pot to make it more juicy. Served it with brown jasmine rice. My house smells like a morrocan market now!

Spicy Vegan Potato Curry

Excellent flavor profile!!! Will definitely make again. I did make one mistake however; I used hot madras curry powder on top of adding the 1 1/2 tsp cayenne pepper. Super duper hot! I still loved it, but next time I am just going to use yellow curry powder.

Tasteful Tahini Salad Dressing

The BOMB!! Awesome dressing. The only change I made was i added 1 teaspoon of agave nectar to sweeten the savoriness a little. This is a keeper folks!!!!

Indian Sweet Potato and Lentil Soup

Wonderfully delicious! As a vegan, this hit the spot! On a side note, this soup needs more liquid to be considered a "soup". I added a 12 oz can of light coconut milk, a diced and peeled granny smith apple, and a small serano chille with seeds removed and minced instead of the red pepper flakes. IT was out of this world!!!!

Zesty Quinoa Salad

As a vegetarian who has converted this New Year to vegan, I have tried to find good recipes to utilize this nutritious grain. I found one here! Such a great treat. I love southwestwern flavors and couldn't get enough of this stuff. It truly does get better the next day after the flavors marry..What a healthful treat! Thanks a million for this wonderful recipe!!!!!!

Vegetarian Tortilla Soup

OUTSTANDING!!!! Fresh cilantro and lime were a great compliment. I whipped this up for my my dad, who is a tortilla soup aficionado, on a football Sunday and he loved it. Great recipe. I have already made this 3 more time and probably will about 30 times more next year.

Hearty Vegetable Lasagna

Good veggie lasagna...make sure you add Double the garlic AT LEAST than what is called for. Also, a teaspoon of salt to the sauce and fresh herbs really make the difference. Otherwise very good...

Roasted Yam and Kale Salad

The garlic put in at the same time as the onion became terribly bitter. Once the vinegar is added to the kale and yams when mixing recipe together at end of preparation, it renders the yams mushy. The taste was OK, but a warning to anyone making this recipe, add the garlic in with the kale instead of caramelizing it with the onion. Another tip would be to add the vinegar to the kale before tossing with the yams.

IT was really good. One tip I would suggest is leaving about half of the liquid in the garbanzo beans and adding maybe a teaspoon of olive oil and oregano in the blender while blending.

My Best Clam Chowder

WONDERFUL!! I added 1 teaspoon dried parsley, 4 cloves garlic with the veggies, 1 teaspoon dried thyme, 1 teaspoon dried oregano, and 1 teaspoon hot sauce. INSANE!!!! served with garlic bread and Key Lime Pie for dessert...and YES,,,,Key Lime is ALWAYS capitalized!!!
