This was a great recipe for using my leftover canned pumpkin after making pumpkin pie, as I had everything I needed in the pantry already. I substituted brown sugar instead of white, as it makes the cookies softer which I love. I also added 1/2 teaspoon of ginger. For the icing I added a couple of drops of orange essence. These tasted amazing! More like mini cakes though. Were a big hit with my partner who doesn't normally like 'sweet' things. Had to take them to work to get them out of the house and they were a big hit!
