Brown Sugar Cookies II

These are wonderufl cookies! Instead of rolling them into logs, I made drop cookies and floured the pan. I cooked them for about 10 minutes, and used the chocolate chip variation with one cup chocolate chips and one cup chopped walnuts. They turned out soft, airy, and delicious!

Applesauce Cake IV

Absolutely AMAZING! I used about 2/3 cup applesauce sweetened with brown sugar, added a pinch of nutmeg, and only used about a half teaspoon of salt. I substituted the butter with 1/2 cup margarine and 1 tbsp fat free milk. I also used an 8x8 inch pan, and it turned out simply fantastic. It is in all honesty the best spice cake I have ever had. That applesauce adds an awesome flavor and texture

Cottage Cheese Loaf II

Great recipe, with a few changes. I thought the recipe was a little bland by itself, so i added 1/2 cup of red, green, and yellow peppers, and a 1/2 cup of onions. I was out of oregano, so I substituted the spice with Italian seasoning> With a little bit of pepper, this dish came out wonderfully! Excellent taste, I'll try making patties next time.

Lemon Ice I

This recipe was great and refreshing! but instead of using 2 lemons, I only juiced and zested one. Then I cut up 5 strawberries and put them in the blender, along with some bottled lemon juice. I added that to the sugar, milk, and lemon mixture. I don't have a ice cream maker, so I used the method of checking every hour and giving it a good stir. It came out deliciously sweet, like strawberry lemonade sorbet! Can't wait to try other fruits!

Banana Waffles

Simple and satisfying! I added some cinnamon and a little more nutmeg for an excellent flavor. Also, I am a huge banana fan, and thought that only 2 banana slices per pancake was a little cheap, so I put 3 or 4 in each pancake. It was great!

Award Winning Soft Chocolate Chip Cookies

I made these cookies for my friends (since I am not a big cookie fan) and used instant chocolate pudding. My friends loved them! I tried one and thought they were a little bland, so i took 1/4 of the dough and added peanut butter. They tasted great, but were very crumbly. All in all, a mediocre recipe.

Berry Cobbler

Great recipe, but not necessarily for a cobbler. It was more of a delicious cake/muffin. Instead of using 2 cups of raspberries, though, I used 1 cup of raspberries, 1 cup of blueberries, and 1 cup of blackberries (all fresh). I also added some cinnamon because I add cinnamon to everything, and it was great!! The cook time was a little low, i cooked it more like 50 minutes to an hour. I also used an 8x8 inch pan, to make the dessert denser. It was crispy golden on the outside, moist and warm on the inside (without being gooey and underdone), and I served it with a scoop of french vanilla ice cream. None was left!

To Die For Blueberry Muffins

Awesome! I made a few minor changes though - I added 2 tsp. of cinnamon to the muffin mix (i like things cinnamony!) and added about a half cup more of blueberries. It was delicisous, though a little doughy in the middle!

My Best Clam Chowder

Amazing chowder! However, I changed a few things to make it super good! I used 3 cans of chopped clams and then 2 cans of minced clams (becuase I like a much more "seafood" taste to my chowder), which was barely enough juice to cover the vegetables. I ommitted the carrots, since I do not care for them or feel they belong in clam chowder. I also used 1/2 quart of half-and-half and 1/2 quart of milk so the soup wouldn't be too rich, but just right! I only used 1 tablespoon of the vinegar, since I was a bit leary of it, but next time will definitely try 2 tablespoons, the vinegar was great! I also added parsley to give it a little added flavor, and there was no soup left! Excellent recipe!
