Gary's Stuffed Mushrooms

Amazing!!!! The filling is delicious. I had 16 mushrooms and a ton of filling left over. I think I'll try stuffing it in some baked chicken tomorrow. Will definitely keep this recipe.

Mexican Rice II

It was way too oily. The flavor was good, but it was way overshadowed by the oil. It's no wonder that a serving is 7 weight watchers points. Weight Watchers has a much more flavorful mexican rice recipe that's only 2 points per serving.

Sugar Cookie Glaze

Perfect sugar cookie glaze. We piped along the edges all of our cut outs in royal icing. Then filled in the middle with glaze, and sprinkled colored sugar on top of that. It was perfect and yummy. Santa said they were great, too.

Cornbread and Sausage Stuffing

It was OK. I used cornbread stuffing crumbs from the grocery store, and tha was probably my bigmistake. Overall, it's just not traditional stuffing to us, and didn't tickle the taste buds. Not bad, but probably won't make again.

Four Cheese Macaroni

This is phenomenal. I took another reviewer's advice and doubled the cheese - it was heaven. It's one of those dishes that is so heavenly, it's sinful. I'll only be able to make this on holidays because it's way too yummy and way too bad for me. I'm sure one serving would take up my entire days worth of weight watchers points, but it's worth it every once in a while.

Soft Christmas Cookies

I made these today, and wasn't impressed at all. I like my sugar cookies to be light and fluffy and puff up really nicely when you bake them. These cookies don't puff up and they're overly sweet. I deducted one star because they didn't hold their shape well and another star based on personal preference. I'll stick with fluffy sour cream sugar cookies from now on. On the bright side - I finally found a cookie that I won't eat.

Pumpkin Turkey Chili

The idea is a 5-star recipe ... it's full of fiber and lean protein. I gave it 4 stars because I had to suit it to my taste. My secret to making it perfect was adding milk. I loosely followed one of the other reviews and added a can of corn, a can of black beans, another can of tomatoes, a can of chicken broth, a couple Tbsp of honey, cilantro, cumin, and pumpkin pie spice. It was still just a little "off". So I added a big pinch of kosher salt and about a half cup of whole milk. The whole milk did it. It helped take it from a thick pumkin-y taste to a creamy & yummy taste. Even my husband liked it.

Mushroom Risotto

I would give this 10 stars if I could. I followed the recipe exactly. The greatest compliment I can get is when my husband takes a bite and says "This is really good". He did just that with this recipe. I will make this over and over.

Shepherd's Pie

It doesn't get any easier than this recipe. I use two tricks that put this dish in the oven in less than 10 minutes. 1. I always make this the day after I make mashed potatoes. I make a double recipe of mashed potatoes so I can just heat them up in the microwave (so they'll spread easier) and put them on the dish. 2. I buy beef in bulk and freeze 1 pound bags individually. I always fry up some meat with onions and then freeze it because it thaws very quickly. That way on nights when I'm pressed for time, I can still get a great meal on the table. Very yummy and easy. It's a great recipe to turn to in a pinch.

Baked Ziti with Sausage

It was quite tasty. I used my homemade marina sauce, so the seasoning was just how we like it in my house. I keep trying to replicate the ziti from a restaurant I frequented in college, and this didn't do it - not cheesy enough. I guess I'll keep looking, but I'll hang on to this recipe b/c it was easy and yummy.
