Quinoa and Black Beans

Yum. I was a bit leary as I have never had Quinoa before but being on a diet right now I decided I needed a high protein meal to fill me up. I left out the cayenne pepper and used one can of beans. I'll be taking it to lunch and eating it cold for the next few days!

Black Bean and Salsa Soup

I made this soup exactly as recipe stated and found it to be super quick and really tasty. I will definitely make this again and maybe try other reviewers suggestions ie cilantro, corn etc. Great soup!

Southwestern Pasta Salad

I took this to a picnic worried it wouldn't suit many peoples taste buds, but was pleasantly surprised by the reaction! Everyone loved it and asked what was in it. Black beans are hard to find in Australia and no one at the BBQ knew what they were and wanted to know all about the recipe. I ended up using a packet of taco seasoning mix as that was what was in my pantry and it worked great. Making another batch as we speak and will continue to make it for potlucks!

White Chocolate Macadamia Nut Cookies IV

I always bring cookies in to the office and this batch got rave reviews from everyone. I bring different kids all the time and this by far has been the favourite! I followed the others recommendations and added cinnamon, more vanilla and doubled the batch leaving the normal white choc and nut amount. All day long my co-workers told me how good they were!

Black Bean and Couscous Salad

I wasn't expecting much from this salad so was completely surprised when I tasted it and absolutely loved it. I thought the recipe was perfect as is, I'm not a huge fan of tons of dressing so I found the amount was perfect. I'm a vegetarian, so I used veggie stock instead of chicken. I always wondered how to make couscous really tastey and now I know! Will definitely be making this one again!

Spicy Vegan Potato Curry

Orzo and Tomato Salad with Feta Cheese

The dressing was a bit oily and bland for me so I ended up using a few tablespoons of light balsamic dressing. In general, I don't like lots of dressing, oils etc in my food. I will definitely make this again as the combo of feta, olives, dill etc was delicious.

Almost No Fat Banana Bread

I followed the recipe and then took SNAPPLEMEBLUE's suggestions and it turned out really tasty! The almond essence added a really nice flavour too. This was a great low fat substitute when you don't need the calories/fat of banana bread, but want the taste!

Hummus III

This hummus was soooo good! I used 2 cans of beans and then followed others suggestion and added cumin. I'm not a huge fan of adding olive oil over dishes when they are done, so omitted the oil on top. I did use a little bit of the chick pea juice while blending. I can't wait to dip into it tonight when I have guests over!

World's Best Peanut Butter Fudge

This was way too sweet. I am wondering if the ingredients here (Australia) altered the taste and didn't make it turn out as nice as all the other reviewers. I had a really hard time finding marshmallow cream and perhaps what I found didn't work as well as it should have. It really was too sweet to eat which was a bummer because my mouth was watering after reading all the positive reviews.

Oatmeal Raisin Cookies I

I always use baking paper when I make cookies so I had no problems with the cookies sticking like others did. I did have my first batch turn out flat and a bit runny like some other reviews, so I took the advice and added a bit more flour to the mixture and the next batch turned out perfect. They smell so good when they are cooking, that added cinnamon really makes them taste yummy!

Sweet Potato and Curried Red Lentil Pizza

Interesting way to use the ingredients in a pizza. I would make this again, but change a few things as I found it to be a bit bland and I had to add a lot of salt to it. Next time I would use a few different types of cheese and use more than the recipe called for.
