Slow Cooker Chicken and Dumplings

Read other reviews and took some advice: used only 1 can of biscuits, added them about 90 minutes before we were ready to eat. This was okay, but nobody was excited to go back for seconds, and I had to eat the leftovers by myself...

Chicken Noodle Soup

I used a rotisserie chicken, first boiling it for awhile and then tearing the meat by hand. That made for some tasty broth and delicious chunky chicken in the soup, which was delish. I also had some okra to use up, so I threw that in, too, and it was awesome. I made this for myself when I was sick, and I was not disappointed!

Blueberry Banana Bread

Banana bread rocks, and this was no exception. Three of us polished off nearly 2 dozen of these scrumptious little muffins in 3 days. I think that speaks for itself.

Marsala Marinated Skirt Steak

I enjoyed the flavor of this. I was SO committed to using skirt steak, but then sirloin was buy-1-get-1 free, and I couldn't resist that deal. It wasn't the same tenderness I was hoping for when I found myself salivating over the video for this recipe, but that's probably my own silly fault for not using the correct cut of meat. However, I wonder if I had marinated overnight, perhaps the tenderness I was shooting for could've been achieved.

'Chinese Buffet' Green Beans

Per hubby: "These are the best green beans I've ever had." And he is not one for dramatic reviews. The first time I made these, I followed the directions exactly. I found that even on low heat the garlic slices burned before I was done cooking the beans. The second time I made it, I didn't pre-cook the garlic at all, just threw the beans and garlic in together and it turned out great.

Easy Pilaf

As is, this is super easy and fast to make. I love that I can decide to make this very late in the day and I usually have the necessary ingredients on hand. My husband (HUGE fan of rice, but not usually one to take second helpings of anything) gobbled this up until it was gone the first time I made it. Instead of broth, I use a refrigerated chicken base - I just think the flavor is great - and I also leave out the salt, as the chicken base is quite salty.

Easy Baked Mushroom and Onion Risotto

Easy Bake Fish

I enjoyed this! I rarely make salmon, so this was a stretch for me. Trying to make more fish (husband's request). He and I both enjoyed it, but our picky 8 year old could barely choke it down. He is VERY sensitive to what he calls "spicy" foods - but really, he just prefers things very bland. Our go-to dinner rescue for him is to let him use ketchup on whatever he likes, but even the ketchup didn't help this for him. I enjoyed the robust flavor of this - I think it's mostly from the mustard - but beware supertasters or parents of supertasters - it's a strong flavor, so not for everyone.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

These were just okay for me. I have never met a cupcake I DIDN'T like. ;) But these weren't my favorite - I was hoping for more "Wow!" especially when my guests tried them (and I let the chocolate chip part be a surprise) - but nobody even remarked that they were especially tasty. A little disappointing.

Chef John's Italian Meatballs

This is my first time making meatballs. I wasn't a HUGE fan to begin with (in my family, we always had meat sauce instead of meatballs with spaghetti). But my husband requested meatballs, and I usually love Chef John's recipes, so I tried this - but it was just okay. I probably wouldn't make again.

Savory Garlic Marinated Steaks

Delicious. Marinated 1/4-1/2" thick ribeye steaks overnight, turning over in the morning. Didn't baste at all while grilling. Turned out delicious - even the picky 8 year old ate all of his.
