Fabulous Beef Tenderloin

I was a little skeptical with so few ingrediants, but it was very easy and turned out quite good. I added fresh mushrooms the last 15 minutes, which I always like with my tenderloin.

ABC Muffins

These were very moist and yummy!! A big switch I made (because I started the recipe and THEN realized I did not have bran), was substituting Quick Oats for the bran and added a tsp. vanilla. But now I have to change the name:) I assume they would be just as great with the bran!

Rhubarb Strawberry Jam

I used 3 cups Rhubarb and 2 cups Strawberries (I didn't have enough rhubarb alone). Cut the sugar to 2 cups and cooked it all together right away. I was too excited to make it to wait overnight. I also used a potato masher to make sure the pieces were not too big. Followed the rest of the recipe and it turned out so yummy. The kids, my mom and mother-in-law loved it!

Southwest Corn Salad

I made this as listed with the exception of 1/2 the chili powder (kids). It was good but just 3 1/2 stars. After the the first helping I added...1/4 cup lime juice, 1-2 tablespoons fresh cilantro and 1 diced avocado (soaked in the lime juice to prevent discoloring). That was all it needed to turn it into a solid 5 for us. We loved it so much, next time I will add lime marinated shrimp to make it a main dish salad. Thanks!

Easy and Delicious Ham and Potato Soup

This was great and went over well during a football game party. Minor changes..I doubled the recipe and sauteed all of the vegys (except corn and potatoes) until tender and then used an immersion blender to puree half of the vegys once it cooked in the liquid for a while (potatoes cooked through) and only used half the butter. Super good and easy!

Banana Sour Cream Bread

Really Good!! I made very small changes...I did not use the sugar/cinnamon mixture for a liner. Used 2 1/2 cups sugar in the mix and used "light" sour cream instead of full or no fat. I baked them in 3 regular sized bread pans. The timing thing others were having trouble with I fixed by baking at 325° for 1 hour. Absolutely perfect!

Pesto Cream Sauce

Quick and easy, but very salty taste. Must be from the romano cheese. I think I would reduce the pesto and the romano next time.

Marinated Pork Medallions with a Ginger-Apple Compote

Very moist, fork tender. I used 3/4 balsamic and 1/4 oil for marinade and let it soak for 3 hours though. I agree...my balsamic is too expensive to use 2 cups worth. Didn't need it and used 2-1# loins. Everything else the same.

Grandma Johnson's Scones

I made cinnamon sugar scones by adding: 1/2 c. sugar, 1 tsp cinnamon, 1/2 tsp. nutmeg and 1 tsp. vanilla. Brushed on milk and topped with cinnamon, sugar mixture. Mine took 18 minutes. I freaked when it was very dry at first and then quickly turned sticky. Got it under control, but might use a food processor in the future. I made two rounds of 6 (12), but might might try 3 rounds of 6 (18) for smaller, kid-sized scones. These make 12 big, coffee house sized scones. Awesome!

Aunt Norma's Rhubarb Muffins

These are moist, yet fluffy. I have never made a muffin as good as this. My 9-year-old said to stop looking for the perfect recipe...this is it. I did use 1 cup rhubarb and 1 cup strawberries, otherwise, followed recipe exactly.
