Slow-Cooker Chicken Tortilla Soup

This was so easy and sooo good. Used store bought tortillas and frozen boneless, chicken breasts still frozen. Topped with a squeeze of lime, chips and cilantro. I will make this again and again!!

Chicken Tetrazzini IV

I also added garlic, minced onion plus some peas for a little color. Next time would add more cream or try milk for lower fat version. Not "saucy" enough. Overall, good and quick meal!

Rhubarb Strawberry Jam

I used 3 cups Rhubarb and 2 cups Strawberries (I didn't have enough rhubarb alone). Cut the sugar to 2 cups and cooked it all together right away. I was too excited to make it to wait overnight. I also used a potato masher to make sure the pieces were not too big. Followed the rest of the recipe and it turned out so yummy. The kids, my mom and mother-in-law loved it!

ABC Muffins

These were very moist and yummy!! A big switch I made (because I started the recipe and THEN realized I did not have bran), was substituting Quick Oats for the bran and added a tsp. vanilla. But now I have to change the name:) I assume they would be just as great with the bran!

Cinnamon-Raisin Granola

I love the flavor and how healthy it is. I just wish it clumped together a little bit. Perfect for yogurt, not so much for snacking out of the bag.

Banana Cranberry Muffins

I used rhubard instead of cranberries and margarine instead of shortening. Also added some vanilla. Turned out pretty darn good!

Barbecued Shredded Beef

I used this recipe for Bison and it was wonderful! I needed the extra liquid it called for to keep the lean bison moist. Will make again.

Super Duper Easy Apple Cake

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I made them as mini muffins for the kids and they loved them! Very moist and not "whole wheat" tasting like other healthy muffin recipes I have tried. I used half whole wheat flour and half oat bran flour. Yummm!!

Gourmet Chicken Sandwich

Simply Divine Meat Loaf with Spinach

This had a great flavor and loved the addition of spinach in meat loaf. Mine was a bit "mealy" though, I think from the cheese. Will try using feta next time. That always goes well with spinach.

Easy Pumpkin Muffins

I also used spice cake mix, omit the spices and added just a 1/4 cup skim milk to make the mixing easier. We love them! I send them to school for class snack and had several of the moms ask for the recipe. This is also a great recipe for kids with egg allergies.

Southwest Corn Salad

I made this as listed with the exception of 1/2 the chili powder (kids). It was good but just 3 1/2 stars. After the the first helping I added...1/4 cup lime juice, 1-2 tablespoons fresh cilantro and 1 diced avocado (soaked in the lime juice to prevent discoloring). That was all it needed to turn it into a solid 5 for us. We loved it so much, next time I will add lime marinated shrimp to make it a main dish salad. Thanks!
