Chicken Fried Chicken
The only thing I added was more seasoning (Mrs. Dash). I had to use more oil than specified because it wasn't enough to fry the chicken. I also had pounded out the chicken breasts beforehand to cook more evenly (and because I don't like thick chicken breasts). I liked the coating a lot, in both taste and appearance. Note: It would be nice if the author would include a link to the gravy recipe he/she uses.

Famous Pork Chops
These were definitely good. Based on other reviews, I only used two eggs, which was plenty, and I added more spices. Also wish I would have cut back the butter. Used center cut boneless chops and they came out pink, which confused me as I always thought they should have been white when done. I did a little research and found a couple of sites that says pink is still okay, as long as the internal temp is at least 145 degrees (it used to be 160 degrees).
